Seafood dishes...?

I want to make a nice, summer-y and somewhat simple meal with seafood for my boyfriend this Tuesday. Personally I'm not crazy about most seafood so I'm not familiar with much of it, but I do know he loves salmon, lobster, crab, scallops, shrimp, calamari, and whitefish. I'd like to do some kind of pasta or rice as a side dish, along with a vegetable (he likes almost any kind). I'm up for suggestions though :) Also, I was thinking a nice Pinot Grigio would go well.

Any suggestions would be great :)

Oh, my.

OK, if Pinot is the wine, let's work around that.

It would call to mind your basic Coquilles St. Jaques, which is to say scallops in a cheese sauce. (Forget the princess potatoes -an affectation).

But let's jazz it up a little, OK?

Get some BAY scallops (not Ocean or Sea scallops) and a jar of small oysters (cheap ones) and marinate those puppies in -guess what? Pinot Grigio, what else!? Mmmmmmm. Let them get drunk for 3 or 4 hrs or more. Make sure to include the liquor (juice) from the oysters. Just cover 'em with the wine.

After they've marinated, put 'em in a big sauce pan (with all the juice and wine) and simmer them (low-to-med high). Add 2 tblspns of Old Bay plus a couple of shakes of hot sauce and a tblspn of chopped garlic. Now add about 4 tblsspens of lemon juice, and the same amount of butter. Your driving me nutz!

Simmer it down to boil off about 1/2 the liquid. Now take 2-3 tblspns of flour in a separate container, add a bit of water and stir to make a thick but runny muck. Pour that in the sauce pan with scallops and oysters a bit at a time and stir it in to thicken. (You may not need all the flour and water mixture).

Now spinkle on about a half pack of shredded parmesan cheese, and stir it in, creating a thick but fluid sauce.

Separately, you've whipped up some Basmatic rice -maybe 2 cups of it, with peas and just a PINCH of curry powder! When the scallops and oyster mix is like a thick gravy, pour it over mounds of rice, garnish with sprigs of scallion, and call the minister cuz yer gettin' married!

Oh ...ceasar salad on the side.

Shrimp kabobs are great!!!!!!!!!! Esp. during the summer

Something really easy, fast, and delicious is grilled shrimp.

Marinate your shrimp in Italian salad dressing over night, then put the shrimp on skewers, and then cook the shrimp out on the grill.

I know it sounds weird to use Italian salad dressing... but trust me... its delicious. And its super easy too!

you can never go wrong with a simple shrimp alfredo.. Do not bother looking up the rec. just cook some pasta, throw in some alfredo sauce from the store, and mix in some nice fresh shrimp! Simple and good.

i make all these together often. the use of lemon ties all the dishes together.it's easy, good, and it looks and tastes very impressive, considering it doesn't take a lot of effort or talent....................

i normally can't stand seafood, but my aunt made this for me, and i loved it. then again anything with alot of butter is good. a hint to ease the taste or 'fishiness' is to soak the fish (in the fridge) in the milk and egg for a few hours before cooking.

Parmesan Fish Fillets

Ingredients:
2/3 cup pamesan cheese
1/4 cup flour
1/2 tsp salt
1/4 tsp pepper
1 tsp paprika (optional)
1/4 cup milk
1 egg; beaten
1/4 cup butter; melted
1/3 cup sliced or slivered almonds
2 lbs fish fillets; 1/4 inch thick
(catfish, cod, tilapia... i recommend tilapia)

Preheat oven to 350 degrees.

Combine parmesan cheese, flour, salt, pepper, and paprika in a shallow dish (like a pie tin/pan). mix milk and eggs together in a seperate dish. Melt butter.

Soak fish in eggs and milk. Dip and dust the fillets and the flour mixture.
Place fish in a glass baking pan. Pour melted butter over fish. Top with almonds.

Bake for 20 minutes, or until fish is done.

Harvest Rice Dish

1/2 cup slivered almonds
2 cups chicken or vegetable broth
1/2 cup uncooked brown rice
1/2 cup uncooked wild rice
3 tablespoons butter
3 onions, sliced into 1/2 inch wedges
1 tablespoon brown sugar
2/3 cup fresh sliced mushrooms
1/2 teaspoon lemon zest
salt and pepper to taste

Place almonds on an ungreased baking sheet. Toast at 350 degrees F (175 degrees C) for 5 to 8 minutes.

Mix broth, brown rice, and wild rice in a medium saucepan, and bring to boil. Reduce heat to low, cover, and simmer 45 minutes, until rice is tender and broth is absorbed.

In medium skillet, melt butter over medium-high heat. Add onions and brown sugar. Saute until butter is absorbed and onions are translucent and soft. Reduce heat, and cook onions for another 20 minutes, until they are caramelized.

Stir mushrooms into the skillet. Cover, and cook 10 minutes or until berries start to swell. Stir in almonds and zest, then fold the mixture into the cooked rice. Salt and pepper to taste.

Haricots Verts With Lemon Brown Butter

1 pound haricots verts or other thin green beans, trimmed
Kosher salt
3 tablespoons unsalted butter
3 tablespoons fresh lemon juice
Freshly ground black pepper

Cook beans in a 2-quart heavy saucepan of salted boiling water until crisp-tender, about 3 minutes, then drain in a colander.

Wipe out pan and cook butter over moderate heat until deep golden, about 2 minutes. Stir in lemon juice and remove pan from heat. Add beans, toss well, and season with salt and pepper.

grilled shrimp, slit them, slip a thin slice of jalapeno in each one then wrap them in small strips of bacon, grill till bacon is down but not crispy, apply light coat of barbcue. delish,but crab legs are great served with melted butter also with a wild rice for a side. all easy stuff.

Seafood Sandwich

INGREDIENTS

1 (8 ounce) package imitation crab or lobster meat
1/4 cup mayonnaise
1 tablespoon finely chopped red onion
1 teaspoon lemon juice
1/4 teaspoon OLD BAY? Seasoning
1 tablespoon butter, softened
2 hot dog buns

DIRECTIONS
In a medium bowl, flake the crabmeat, and mix in mayonnaise, onion, lemon juice and Old Bay seasoning. Cover and refrigerate for 30 minutes to allow the flavors to mingle.
Spread butter on the inside of the hot dog buns, and toast under the broiler. Fill buns with the crab salad, and serve.

Seafood Lasagna

INGREDIENTS

1 (16 ounce) package lasagna noodles
1 pound cooked salad shrimp
1 pound fresh crab meat
3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk
1 cup grated Parmesan cheese
5 cups shredded mozzarella cheese

DIRECTIONS
Cook lasagna noodles in a large pot of boiling salted water until al dente. Drain well.
Preheat oven to 350 degrees F (175 degrees C).
In a medium size saucepan over medium heat melt butter or margarine, stir in flour and let flour brown slightly. Stir in milk, stirring constantly until sauce thickens. Add the parmesan cheese to the sauce and stir well.
In a 9x13 baking pan spread a thin layer of white sauce, followed by a layer of cooked lasagna noodles. Place 1/4 of the shrimp, 1/4 of the crabmeat and 1 cup mozzarella cheese on top of the lasagna noodles. Repeat three times, making four layers. Top the final layer with sauce and remaining mozzarella cheese. Bake for 45 minutes or until top is brown.

I'm from Louisiana and my mom won a contest with this casserole. Try it and impress him.

Buy 2 small tubes of Saffron (yellow) rice in the rice aisle (duh, right?) cook it according to package directions

add to the rice
1 pound of peeled, deveined, uncooked shrimp
1 can undrained chopped Rotel tomatoes
1 stick of butter
1 can of cream of mushroom soup

Bake at 350 for 35 minutes and enjoy!

I've never met a man who didn't like this recipe! Add a nice loaf of french bread and your wine and you have a Wonderful meal and a new favorite recipe; I promise. Have fun. (Wink!)

Balsamic & Basil Shrimp Pasta


Ingredients
1 Tbsp. olive oil
8 oz. peeled, deveined medium shrimp
2 Tbsp. Garlic Garlic?
1/4 cup Balsamic & Basil Dipping Oil
16 oz. prepared angel hair pasta

Directions
Heat olive oil in a skillet over medium high heat; add shrimp. Cook about 1 minute on each side until shrimp begin to turn pink. Do not overcook. Add Garlic Garlic?; saute just until softened. Add Balsamic & Basil Dipping Oil; heat through. Remove from heat; toss with hot pasta. Serve immediately. Makes 3-4 servings.

This is a really good seafood salad, serve it cold (or room temp) as a side dish. You can also add small cooked shrimp.

12 oz. imitation crab meat
1/2 to 3/4 c. mayonnaise
2/3 c. celery
1 to 2 tsp minced onion
Pepper to taste
1 pound cooked ruffle pasta

SWAM (Filipino Cuisine)

Ingredients:

1/2 K. large shrimps (5 to 7inches)
5 cloves of garlic (pounded)
1 white onion
5 in. ginger (cut)
leeks (cut in 3inches)
2c. chicken stock
1tbsp. fish sauce / or salt to taste
1/4 tsp. Black pepper powder

Procedure:

Prepare all the ingredients. Wash the shrimps without removeing the shell, only the whiskers. In a casserole, saute garlic, till light brown the add the ginger and then the onions, season with black pepper and fish sauce. Pour the chicken stock and when it starts to boil that's the time you put the shrimps and the leeks, cover the pot. Close the fire after a minute of boiling. Serve this with cooked rice. It's quick ,simple and inexpensive. I love to make my own shrimp alfredo but I like to use the big fresh waters prawns, Ragu cheesy alfredo sauce season to taste with complete seasoning and as far as the noodle I don't think it really matters whatever you like.Me personally I like to use the Linguine or the noodles shaped like cute cork screws it just makes the dish more fun to for me.

1. Clean and boil shrimp until done (pink) usually take s about 5-8 mins. I like using fresh shrimp more so than frozen

2. Start noodles in separate pot add a pinch of salt and tea spoon of vegetable oil to water boiling im pretty sure you know how tender you like your noodles

3. Once shrimp and noodles are done drain them both.Combine shrimp with noodles and 2 teaspoons of butter an Ragu sauce stir and season to taste with Complete seasoning. Hope you like it just in case you needed some reassurance I was born and raised in Florida knows plenty of seafood dishes passed from family hit me if you would like more.

make him a macoroni and shrimp salad. actually you can use tuna, lobster or any seafood. just cook up some elbow mac, drain it, add shrimp or whatever, hard boil about 4-5 eggs and slice them up in the salad, maybe some celery seed, mayo, and salt to taste, and sliced celery. serve it hot or cold. and man is it good!!!!
