Good Shrimp Recipe?!

Question:

Good Shrimp Recipe?

I've got some shrimp (no shell, deveined) and not sure what exactly I want to do with it tonight. Any suggestions?

Answers:
Scampi is one of my all time favorite ways to have shrimp!

SHRIMP SCAMPI

24 lg. uncooked shrimp (peeled, deveined, leaving tails on)
4 lg. garlic cloves, finely minced
1/2 stick butter
1/2 c. olive oil
1 c. white wine
1 tbsp. chopped parsley
Lemon wedges
bread crumbs

In a skillet, saute a few spoons of bread crumbs, parsley and garlic until lightly browned. (Add garlic after a few moments so that it doesn't get brown.)
Add shrimp, marinade and juice from a couple of lemon wedges and cook until shrimp are pink (a few minutes) and juices in pan are bubbling hot.

Serve shrimp with scampi sauce for dipping, and garnish with lemon wedges.

Garlic Shrimp and Pasta (Low fat recipe)
2 tablespoons cornstarch
1 (14 1/2 ounce) can Swanson chicken broth
2 cloves garlic, minced
3 tablespoons chopped fresh parsley
2 tablespoons lemon juice
1/8 teaspoon ground red pepper
1 lb medium shrimp, shelled and deveined
4 cups hot cooked thin spaghetti, cooked without salt (about 8 oz. dry)

1. In a medium saucepan, mix cornstarch, broth, garlic, parsley, lemon juice and pepper.
2. Over medium-high heat, cook until mixture boils and thickens.
3. Stir constantly.
4. Add shrimp.
5. Cook for 5 minutes or until shrimp turns pink.
6. Stir often.
7. Toss with spaghetti.
