Fig Drop Cookies
INGREDIENTS:
* 1 cup dried figs, cut in small pieces
* 1/2 cup water
* 1/2 cup shortening
* 1/2 cup butter, room temperature
* 1/2 cup granulated sugar
* 1/2 cup brown sugar, packed
* 1 egg
* 1 teaspoon vanilla
* 2 cups sifted all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon salt
PREPARATION:
In saucepan, combine figs and water. Cook for about 5 minutes, stirring frequently, until mixture is a thick paste. Cool.
Cream shortening, butter, sugars, egg, and vanilla until light and fluffy. Into another bowl, sift flour, baking powder, and salt.
Add sifted dry ingredients to the creamed mixture, blending well. Stir in fig paste until well blended. Drop by spoonfuls onto greased baking sheets. Bake at 375° for 11 to 14 minutes,. Cool completely before storing in a tightly covered container.
Makes about 30 to 36 cookies.

Dried Fig, Goat Cheese and Arugula Salad
4 servings 20 min 15 min prep
1/4 cup walnuts
1 1/2 sprigs rosemary, stems discarded
1 tablespoon honey
2 tablespoons sherry wine vinegar
1 tablespoon water
1 teaspoon Dijon mustard
1/8 teaspoon salt
1/8 teaspoon pepper
4 teaspoons extra virgin olive oil
6 ounces arugula
6 white dried figs, stems removed
4 tablespoons goat cheese
Toast walnuts on a baking sheet in the oven at 300 degrees until they are just fragrant, about 4-5 minutes. Transfer to a plate to cool.
In a food processor, or metal bowl, combine rosemary, honey, vinegar, water, mustard, salt, and pepper. Slowly blend in the oil.
Combine arugula, figs and walnuts in a salad bowl. Give the dressing a final whisk and toss with salad. Divide salad onto four plates and garnish with one tablespoon of goat cheese.
