Banana Nut Bread or Muffins
1 cup white sugar
1 cup brown sugar (packed)
3 eggs
2 cups very ripe mashed bananas
3 cups flour
1 ? cups buttermilk
1 ? teaspoon baking soda
1 ? teaspoon baking powder
1 teaspoon vanilla extract
1 cup butter
1 cup chopped nuts (more if desired)
1 teaspoon cinnamon
Preheat oven to 350 degrees F (175 degrees C). Spray muffin tins with non-stick cooking spray
Cream together butter and sugar. Add one egg at a time, beating well after each addition. Mix in bananas, buttermilk, and vanilla. Mix in flour, cinnamon, baking powder, and baking soda. Stir in nuts, if desired. Fill muffin pan cups 2/3 full.
Bake for about 20 to 25 minutes, or until tops are lightly browned. Remove muffins from pan.
You can use this same recipe for banana nut bread, only cook it at 300 degrees for 70 minutes or until toothpick comes out clean. This recipe fills 2 greased 9x5 loaf pans.

1. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda and salt. Set aside.
2. In a large bowl, combine bananas, sugar, egg and melted butter. Add flour mixture, and beat until smooth. Scoop into muffin pans.
3. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.
