I would suggest you look into steaming fish instead of baking.

If you like spicy try it blackened we like our fish blackend using Tony Chacheres Special Herb Blend. It doesn't have all of that paprika in it. You could also try it with some BBQ and mesquite seasoning.
BAKED STUFFED VEGETABLE FLOUNDER

Flounder fillet

FOR EACH FILET:

1/2 c. sliced zucchini
1/2 c. sliced mushrooms
1 thin slice tomato
Pinch of dried basil

Lay veggies and tomato over filet. Roll each filet or fold end to end. Bake at 375 degrees for 10 to 15 minutes. You may also wrap individually in foil and steam, serve in foil. Serve with 1 cup tossed salad. Single serving = 4 ounces protein, 1 cup vegetable.

Baked Flounder Teriyaki

6 small flounder or other lean fish
fillets (about
1-1/2 pounds)
1/3 cup dry sherry or apple juice
3 tablespoons lemon juice
2 tablespoons chopped green onions
2 teaspoons finely chopped gingerroot
2 teaspoons honey
1 teaspoon Vegetable oil
1/4 teaspoon pepper
2 cloves garlic, finely chopped

Recipe Instructions:
Spray rectangular pan, 13 X 9 X 2 inches, with nonstick cooking spray. Place Fish fillets in pan. Mix remaining ingredients; spoon over fish. Cover with aluminum foil and refrigerate 1 hour. Heat Oven to 375 degrees. Bake covered 15 to 20 minutes or until Fish flakes easily with fork. 6 servings

Take a flay of flounder and place it on a sheet of aluminum foil big enough to wrap the fish. Put slices of onion on it. On top of that put slices of tomatoes and the some lemon juice and white wine. Wrap the foil around it so that there is a tight seal. Place it in preheated 400 degree oven and let bake until the foil has puffed up as far as it can go. It will take 5 to 8 minutes to bake.

Simply in a foil put the fish drizzle with Olive Oil arrange with round lemons & bake for 10 mins cover .

Then as a side dish Boiled Potato & Egg . Yummy !

Cheesy Mushroom Baked Flounder


6-8 servings 43 min 10 min prep

2 lbs flounder fillets
3/4 teaspoon thyme
4 green onions, finely chopped
1 cup sliced mushrooms (sometimes I use more)
1 cup shredded cheddar cheese (or monterey jack cheese)
4 tablespoons butter, melted
3/4 cup breadcrumbs
1 teaspoon parsley
1/4 teaspoon paprika


Preheat oven to 350. Lightly spray or grease a 13" x 9" baking pan.
Place flounder filets in prepared pan.
Sprinkle filets with thyme and chopped green onion. Scatter sliced mushrooms over top.
Evenly sprinkle shredded cheese over top.
In a small bowl, mix together melted butter, breadcrumbs, parsley and paprika. Sprinkle over top of cheese layer.
Cover and bake for about 30 minutes.
Uncover and broil for about 2-3 minutes to lightly brown the top.
