Question:

What cut of beef is used to make beef tataki?

I would like to try to make some at home so i would like to know what cut of beef to buy.


Answers:
Round steak, according to this recipe:

3/4 lb. beef round steak
1 tbsp salt and a dash of pepper
1/2 small daikon radish
1 onion
4 shiso leaves
1 carrot
1 green onion

*For dressing: 2 tbsp soy sauce, 2 tbsp fresh lemon juice, 2 tbsp rice wine vinegar

PREPARATION:

Thinly slice onion. Soak them in water and drain well. Slice daikon, carrot, and shiso into thin strips. Chop green onion. Rub salt and pepper on beef round. Grill the beef until rare.

Soak the beef in ice water. Dry the beef and thinly slice it. Place vegetables and beef slices on a plate in a colorful pattern.

Mix soy sauce, vinegar, and lemon juice to make dressing and pour over the salad.

Note: I'm guessing that you could probably use any good, lean cut of beef that holds up well when grilled.

the beef slices are traditinally eyefillet or sometimes called longfillet/tenderloin- but any high quality cut will do it
