Low fat cake or biscuit recipes (following weight watchers)?!
Low fat cake or biscuit recipes (following weight watchers)?
I buy weight watchers cakes now and again as I'm following the plan.
I was thinking about making my own cakes instead (I don't eat very many about 6 very small slices a week) but I would have to be careful with points values.
Any low fat recipes?
Answers:
Weight watchers have loads of recipes on their web site, I've not actually looked for a cake recipe but I am sure you aren't the only person that ever wanted to make a low cal cake so try searching their site first
Steamed blueberry cake
POINTS? Value: 2.5
Servings: 8
Preparation Time: 10 min
Cooking Time: 90 min
Level of Difficulty: Easy
This cake steams in saucepan of simmering water like a classic pudding, so you don't have to use the oven at all.
3/4 cup plain white flour
1/4 cup plain wholemeal flour
1/3 cup caster sugar
1/2 tsp baking soda, (bicarbonate of soda)
1 1/2 tsp baking powder
1/4 tsp ground cinnamon
1 whole whole egg, lightly beaten
1/4 cup skim milk
1/2 cup skim or low fat vanilla yoghurt
2 tbs canola oil
1 tsp vanilla essence
1 cup fresh blueberries
1 tbs icing sugar
Instructions
Combine both flours, sugar, baking soda (bicarbonate of soda), baking powder, cinnamon and a pinch of salt in a large bowl. Combine the egg, milk, yoghurt, oil and vanilla in a separate small bowl. Stir well until combined. Make a well in the flour and fold through the egg mixture until well combined. Carefully stir through the blueberries.
Spray a 1-litre capacity souffle dish with oil. Spoon the cake batter into the dish and level with the back of the spoon. Spray a sheet of foil with oil and cover the dish tightly, oil side down, so that the cake is water tight.
Pour 3 cups boiling water into the base of a large saucepan. Place the cake in the bottom of the saucepan, cover and simmer on a very low heat for 1 1/2 hours. You may need to add more boiling water during the cooking process, so keep a check on the water levels. Test the cake with a cake skwewer and, when cooked, carefully remove from the saucepan. Allow to stand for 5 minutes before turning out onto a cake rack. Sprinkle with the icing sugar and serve.
Cut into wedges and accompany with low-fat vanilla custard if POINTS values permit.
Notes
This cake will keep in an airtight container for 2-3 days, and is suitable to freeze. We suggest that you portion the cake into individual slices and wrap in plastic for best portion control and freshness.

Weight watchers clubs actually sell recipe books that include cakes and biscuits
Oh yes!
Last summer, I learned at a meeting that you take a box of cake mix and instead of the usual ingredeints, you just add a cake of diet soda pop (any flavor). Cook as directed on the box. Mmmmm! Make as cup cakes or regular cake, top with low cal frosting or fat free whip. Oh seriously, try it! It makes the cake so so so good and moist! I do believe it's only 1 or 2 points, depending on what the box cake is.
I do believe I need to go make some right now!
I have made this cake recipe and it is very good. You take a cake mix of your choice and just add a diet soft drink. Bake it as directed. It turns out great. Some combinations that are really good are White cake mix, Diet Strawberry soda, use Fat Free Cool Whip and sliced strawberries on top. Yummy!!
Also really good is Chocolate cake mix and Diet Cherry Coke. Lemon Cake mix and Diet Sprite. This is really low in points so you can have a bigger slice. I made the strawberry cake for Easter and my entire family wanted the recipe. They couldn't tell that it was low fat.
