this one is yummy.... we usually wrap them in foil and do them on the BBQ but I have also layered them in a casserole dish and baked in the oven....

Two Potato Packet

2 medium sweet potatoes
4 small red potatoes, thinly sliced
1 medium sized onion, chopped
2 tablespoons margarine or butter, cut into small pieces
4 small sprigs of fresh rosemary, basil or oregano (I have used dried too, works just as good)
Salt
Pepper
1/2 cup shredded smoked provolone or Gouda cheese (I have used mozzarella cheese and it works too)

Fold four 24x18 inch pieces of aluminum foil in half to make 18x12 inch rectangles. Divide sweet potatoes and red potatoes among the foil rectangles, alternating and overlapping the slices. Top with onion, margarine, herbs, slat and pepper.

Bring up opposite edges of the foil and seal with a double fold. Fold remaining edges together to completely enclose vegetables, leaving space for steam to build.

Grill on BBQ until potatoes are tender. Remove packets from grill. Open packets and sprinkle with cheese. Let stand for 1 to 2 minutes or until cheese is melted.

Try this.

Boil the sweet potatoes. Mash it (after peeling). Add some salt, pepper, vinegar, fresh herbs (any) and ranch (or any other ) salad dressing.

they are good just wrapped in tin foil and baked like a regular potato (put butter on it). or you can chop em up, and bake them in a casserole dish with nuts and raisins, add brown sugar and butter. or you can make french fries out of em. there are lots of ideas. good luck

2 lg cans of sweet potatoes
1/2 stick butter
1/2 cup maple syrup
1 package mini marshmallows
preheat oven to 375 grease 13x9 pan add potatoes melted butter and maple syrup cook till bubbly add marshmallows on tip and put back in the oven until the marshmallows melt and brown on top

8 average size sweet potatoes
1 tbsp. vanilla
3-5 tbsp. sugar (to taste)
1/2 stick butter
1/4 tsp. cinnamon to taste
1/4 - 1 tsp. nutmeg to taste
1/4 c. orange juice to taste
Marshmallows (lg. or miniature)
Cinnamon sugar (opt.)

Boil (or bake) sweet potatoes until done. Remove peeling from HOT POTATOES and mash well, removing all strings. Add all ingredients but marshmallows and cinnamon sugar; mix well. Spray or grease lightly Pyrex or Corning dish. Put a layer of potatoes, layer of marshmallows until filled. Sprinkle cinnamon sugar for added flavor. Bake about 350 degrees until HOT. Remove from oven and put marshmallows on top. Place again in oven to brown lightly. Serves 10 to 12.
You may add 1 cup scalded homogenized milk to potato mixture.

Orange extract may be used instead of orange juice. It is stronger in taste so add carefully to taste.



this is an awsome recipe!! my mom always makes it for thanksgiving! if you dont want something this fancy try sweet potato fries....the are sooooo good!!!!

Have you ever tried just making them like regular potatoes? Mashed, with salt, pepper, and butter. Yummy! It's the ONLY way that I like them.

I wrap mine in aluminum foil and poke it then bake it like you would a reg. baked potato. Once its done I open it up sprinkle on some brown sugar and a pat of butter or add more if you like then put back in the oven until the butter melts. Its very good. I hope you like it.

yams, sweet potatoes, brown sugar, granulated sugar,butter,or margarine,nutmeg,cinnamon,and cook until juice is at your desired texture and enjoy.

Bake like white potatoes and serve with butter, salt & pepper, but be sure to bake in a tray or sheet pan because they are sweeter and jucier and sometimes drip sugar.

It's been said before but wrap in foil and bake in the oven. Finish off w/ butter and brown sugar.. yum
