Chipotle-Molasses BBQ Sauce

Ingredients:
2 Tablespoons unsalted butter
1 large Spanish onion, coarsely chopped
3 cloves garlic, coarsely chopped
2 cups canned plum tomatoes and juices, puréed
2 cups water
1/4 cup ketchup
1/4 cup red wine vinegar
2 Tablespoons Worcestershire sauce
2 Tablespoons dark brown sugar
2 Tablespoons honey
1/4 cup molasses
1 Tablespoon Dijon mustard
3 Tablespoons ancho chile powder
2 chipotle chiles, canned
Salt and freshly ground pepper

Prep:
Heat the butter over medium heat in a heavy-bottomed medium sized saucepan. Add the onions and garlic and cook until translucent, 3-4 minutes. Add the tomatoes and water and simmer for 10 minutes. Add the remaining ingredients and simmer for an additional 20 minutes, stirring occasionally. Transfer the mixture to a food processor and purée until smooth, season with salt and pepper to taste. Pour into a bowl and allow to cool at room temperature. Will keep for 1 week in the refrigerator stored in a tightly sealed container.

Ingredients:

* 1kg Chicken wings, cut in half through the joint and trimmed
* 1 clove Garlic, minced
* 3 tbsp fresh Ginger, minced
* 3 tbsp Orange zest
* 4 Spring Onions, chopped
* 1 Chilli, finely chopped
* 2 tbsp Honey
* 2 tbsp Soy sauce
* 200 ml Sesame oil
* Salt and Pepper

Method:

* Blend garlic, chilli, orange zest, ginger and spring onion in a pestle and mortar together until a paste is formed.
In a large bowl combine the honey, soy sauce and sesame oil with the paste.
* Marinate the wings with the paste and leave in the fridge overnight or for t least 3 hours.
* Cook on a hot Barbeque for 7 -8 minutes each side or until chicken is thoroughly cooked and golden brown.

want something quick without a lot of bother. My mom had a favorite and I use it still today. I take 1 cup of sugar, 1 cup of ketchup and a bottle of A-1 sauce or equvilant to the same taste of sauce, Mix it togeather untill combined and then put on the wings. And it is simple but good.
