Zucchini..?
Its the first time I am making a Zucchini for my 21 month old daughter...my question is that do I have to peel off the skin before cooking or can it she have the Zucchini with the skin on?

You don't have to peel.
Try filled zucchini:
you should create in a cut zucchino (about 7 cm) a sort of boat and fill it with a stuffing made by eggs, parmesan, mice meat, marjormam, boild potatoe, pepper , salt and the part of the zucchini you have "dig".
You can fill also in the same way very little aubergines and (the best) onions.
Then you have to oven zucchini.

You ought to be able to leave the skin on, unlessit's just really tough. Try sprinkling it w/ some Parmesan cheese and see how she likes that! mmmM!
Smaller, fresh zucchini should have thin enough skin that softens enough when it's cooking. Bigger, older zucchini tend to have tougher, thicker skins which do not soften much.
Zucchini is the best! I usually slice it into quarters, throw it in some foil w/ Olive oil and some salt & pepper and grill it for about 5 minutes.

you dont need to peel the skin, it comes out soft, and that where all the fiber is, if someone peeled a zucchini and tried to feed it to me, i dont think i would want it. its no cucumber.
if it is young zucchini, the skin well cooked would be fine. However, if she 'gum's' her food, without the skin may work better for yor daughter.
Zucchini /Courgette as know it in the UK, can be eaten with the skin.
I take it you will be mashing it up in a liquidiser. The skin is no problem at all for her Honey.
