Chicken Piccata?!

Chicken Piccata?

I went to dinner at the Broadmoor (the rich part of Colorado Springs) and paid nearly $25 for Chicken Piccata with a side of rice and vegetables. I can make Chicken Piccata at home, along with rice and veggies, but is it reasonable to pay that price for something that I could make just as well?

Well, the Broadmoor is very expensive (depends on which of their many restaurants you go to, but ...). I still think $25 for chicken piccata is REALLY high - it's CHICKEN, not veal! If you can make it at home, don't order it out unless you want to see how someone else makes it : ).

For fabulous Italian in the Springs, go to Biaggis at the shops at Briargate on Briagate Pkwy. They have yummy food and it's pretty reasonable for a white tablecloth kind of restaurant (no, I don't work for them I just really like their food!)

Absolutely NOT. I love to cook. When I go out to eat I usually order something that I wouldn't cook at home. I could see if you had a great piece of fish, or something that was really time consuming to prepare, but not chicken. You got hosed!

well that is expensive...for me it would have to be a special occasion. if not i would make it myself...

Veal -or-Chicken Piccata



3-4 servings 15 min 5 min prep

1 lb veal scallops or boneless skinless chicken breasts (pounded thin)
flour
salt and pepper
3 tablespoons olive oil
3 cloves garlic (minced/crushed)
1/2 cup dry white wine
1/2 cup chicken broth
3 tablespoons capers (optional)
1 lemon, peeled with pith removed,sliced thin
2 tablespoons butter
4 tablespoons fresh parsley (optional)


Dust veal/chicken with flour.
Season with salt/pepper.
Saute in oil until lightly browned (2-3 minutes).
Remove meat from pan and keep warm.
Add garlic, saute 1 minute.
Add broth and wine, bring to a boil.
Reduce to 1/3 cup.
Stir in capers and lemon slices.
Return to boil and add butter and parsley.
Add meat back to pan and warm through.
Serve with pasta or rice-garnish with parsley and lemon slices if desired.
