Making salmon -- what to do with the rice and pineapples!?

i have salmon and i'm cooking it in the pan with olive oil. i want to do something with white rice, onions and pineapple chunks in the can....i did have a recipe for this but don't remember it....does anyone know how it goes....


Answers:
Pineapple Rice

2 tablespoons butter or margarine
1 cup basmati or long-grain rice
1/8 teaspoon ground cumin
2 cups water
1 teaspoon salt
3/4 cup chopped red bell pepper
1/4 cup chopped green onion
1 (8-ounce) can pineapple tidbits in juice, well-drained, coarsely chopped
Melt 1 tablespoon butter in 4-quart saucepan until sizzling. Add rice and cumin; cook over medium-high heat until rice begins to brown (1 to 2 minutes).
Stir in water and salt; bring to a boil. Reduce heat to low. Cover; cook until all water is absorbed (20 minutes). Let stand, covered, for 5 minutes.
Meanwhile, melt remaining 1 tablespoon butter in 10-inch skillet until sizzling. Add red pepper and onions; cook over medium heat until tender (3 minutes). Stir in pineapple; cook 1 minute or until heated through. Gently stir rice with fork; stir in vegetable mixture.

Serve the rice on the side, fry the Salmon in the pan like a steak, use the Pineapple in the dessert, leave the onion in the fridge.
