I like Worcestershire sauce and pepper on steak. Just sprinkle it on before you cook, or let it sit a few hours (keep it in the fridge) for a stronger flavour. Lamb, I would try bashing up some fresh rosemary and garlic, mixing with oil, and marinading the lamb for a few hours.

I don't know if this is correct, but I've heard that salting meat before you cook it will only make it dry. Like when you salt cucumbers to deliberately draw out the moisture, same is supposed to happen to meat. So I always leave the salt til after cooking.

Cook it long and slow in a bottle of red wine, with chopped veggies.

Easiest way is to buy some basic "grill seasoning" and it will work on most meats. I personally love using my own mixture or salt, freshly ground pepper, lots of rosemary and thyme.

Lamb goes really well with rosemary or garlic. Make small cuts all over the meat and push sprigs of rosemary into them. Or you can rub garlic cloves over the meat before cooking.

Beef I'm not as fond of so don't cook it very often and when I do I just serve it with horseradish sauce and mustard!

Less is more with steak and lamb. The meat should speak for itself, which is why buying quality meat is so important. Make a sauce / gravy by all means but try not to overseason either. Pepper and a little salt on fillet steak is marvellous if you then pan-fry them with butter and chopped shallots. With lamb, roast it with some slivers of garlic slipped into it and a few sprigs of rosemary.

EDIT: DON'T BUY ANY PRE-PREPARED MARINADE RUBBISH FROM SUPERMARKETS! Why would you want to eat a bunch of chemicals, food colourings and flavouring chemicals?

for steak I like to drizzle olive oil and then sea salt. Grill for 3min each side. If it is thicker then up to 6 min each side. Lamb I have never cooked sorry.....

Use a dry marinade they work quite well and are quicker than a liquid marinade.

You could go and buy those bottles that say steak seasoning in the store, but I like to make my own. You could marinate the meat overnight and that will be nice(you could marinate in whatever you like:wine, oil, vinegar, juice). You know what is really good too, just put salt and lemon. I put lemon on everything.

I experimented with lamb back when i was newly married an a very inexperienced cook. I fixed it this way & my sister who is picky & an excellent cook liked it! Take the leg of lamb and stab it several times all over with a sharp knife. Insert a slightly crushed clove of garlic in each hole. Rub with olive oil and sprinkle salt & pepper & rosemary over. Gently baste with the chespest red wine you can find. Roast on low heat (about 180) for 30 mins, basting with red wine as necessary (you dont want it dying out) then drain excess fat out of bottom of roasting tin and surround the lamb with chopped root veg (potatoes, onions, carrots) make sure the veg is mixed in with the juices. Leave in another 45 mins until the veg is crisp tender and golden. (thats for a full leg of lamb so adjust as needed acorrding to the cut of meat.) You can also rub english mustard onto the top of the roast the last 20 mins for extra flavour.

For beef, try marinating in a mixture of worster sauce and soy sauce. rub salt & pepper into the meat along with oregano and thyme. roast again at a low heat according to the weight of the roast. dont 4get the veggies!!!

my mates and i have perfected a steak marrinade for our bbq s, it is marmite, wochestershire sauce, little olive oil
and steak pepper spice [shwats]or what ever , not telling you the amounts work it out for yourself;; cos one day this bad boys gonna be on the shelf xx

For steak you should use salt free steak seasoning. Salt always toughens steak. And for lanb I usually use fresh herbs like thyme oregano and rosemary and cook it with a little red wine

yes marinate it over night in a little garlic in olive oil and salt it and fry or grill next day slowly Dave

GRILLED STEAK MARINADE

1/4 c. olive oil
1/4 c. soy sauce
1 tsp. lemon pepper seasoning
1 tsp. garlic powder

Mix together. Marinate 2-3 hours

bbq

season salt
? cup water
? cup cider vinegar
4 tbsp brown sugar
? cup ketchup
2 tbsp Worcestershire sauce
1 tbsp honey
? tsp garlic powder
? tsp onion powder
1 tsp seasoned salt
? tsp pepper
marinade for 4 hours

Taraggon is a great flavor for lamb.
