southern redneck's everywhere...LOL

nope, don't dip it in anything...try spritzing some lemon on it, could even try some lemond rind. Some pepper, or any other spices you like. Don't salt it.

What fish? You never specified the kind of fish. If you want low fat or healthy, forget the egg whites and water. Just sprinkle on salt and pepper and some italian herbs, or herbs de provance and bake or broil (takes less time). Easy, smeasy!!

First lightly flour, then egg whites, ( whole eggs are ok in small amounts) then coating. By using the flour first, it helps the coating stay on better. Milk is also fine if that's your choice.

Brush it with a mixture of melted butter(just a little bit) soy sauce, and lemon juice. Let marinate and then broil a couple minutes on either side. The butter helps keep it moist and browns easily. Yumm....goes great with rice.

if you are trying to keep it healthy, then avoid any breading whatsoever.

fresh fish should be enjoyed for what it is, not covered up with something else... sprinkle with a little bit of salt & pepper, drizzle with a little bit of olive oil and maybe a squeeze of lemon juice. broil it uncovered or bake it covered by foil. you could also use fish stock and/or a little white wine & lemon juice to poach it on the stove.

I would prepare fish this way:
wash with cold water, pat dry
sprinkle with salt and lemon juice
roll in flour
roll in egg white whipped with a tblspoon of water ( there is no fat in egg white)
roll in flour again.
bake in oven at 425 deg on a baking sheet coated with a little oil for about 10 minutes

or
line dish with aluminium foil
sprinkle fish with salt, pepper, lemon juice
put three little pats of butter on top
fold up foil into packet.
put inot 450 deg oven and bake for 8 minutes.
Check fish. It should be flaky white and juicy.

Well, this is an amazingly easy way to cook fish that my mom used whenever she didn't have much time.

1.Brush the fish with a generous serving of a bottled pesto of your choice. Let it marinate for 20 mins (preferably sun-dried tomato pesto if you have white fish as it's the best tasting).
2.Line your baking tray with foil paper, and put the fish in the center.
3.Bring the corners of the foil into the center and make a parcel with the foil
4.Put it in the oven at 180 celcius until the fish is cooked.

This technique is very interesting as the fish is also steamed in the water trapped in the parcel. It makes for a very moist method of cooking, (en papillote it's called i believe) and is absolutely hassle free!
