Got some corn flakes? If so, I have a delicious, easy and low-cal recipe for you.

This is a variation on Southern Fried chicken but there's no frying and the breading is healthy; it's baked in the oven instead of fried. The resulting chicken breasts can be served whole along with vegetables and a small salad, or they can be sliced into strips and put on top of a salad for a light and summery dinner or lunch.

Pre-heat oven to 375 f.

Place 3 to 5 chicken breasts in a high-sided casserole along with 2 cups of buttermilk (which is naturally low in fat).

Put into a zip-lock bag about 2 cups of corn flakes; seal the bag and mash the flakes into medium-sized crumbs. Open the bag and add any cajun or similar seasoning you like; close bag and shake to mix. Pour the crumbs into a large bowl.

One by one remove the chicken breasts from the buttermilk and bread them generously with the corn flake--crumb and spice mixture.

Apply a very thin layer of corn of canola oil to a standard sheet pan. Arrange the breaded chicken breasts on the sheet pan and spray with a non-stick product such as butter- or olive oil-flavored Pam.

Bake for about 25 minutes or until chicken feels quite firm to the touch and crumb mixture is golden brown. (do not try using foil on the sheet pan or the chicken will stick and you'll have a mess to deal with).

That's it . . . the chicken will be juicy and very flavorful. Bon appetite!

Quick, Easy -N- Fast Oven-Baked Chicken Parmesan Recipe

6 boneless skinless chicken breast halves (about 2 lbs.)
1 packet seasoned coating mix for baked chicken
2 C. spaghetti sauce
1 t. dried oregano
1/2 t. dried basil
1/4 C. grated Parmesan cheese
1 1/2 C. shredded mozzarella cheese

Preheat oven to 400°F. Coat the chicken with the baking mix as described on the package directions. Place chicken in a 9 x 13 inch baking pan. Bake for 20 minutes until the chicken is cooked through.

In the meantime, warm the spaghetti sauce on the stove in a saucepan.

Take chicken from oven after cooking, spoon sauce over each piece. Sprinkle with oregano and basil and top with cheeses. Return to the oven for an additional 5 minutes or until the cheese is nicely melted.

Serving suggestion: Serve with cooked pasta, such as spaghetti, fettuccine or rigatoni.

Makes 6 servings.

If you look up EASY in dictionary, you'll see Shake n' Bake. You cant get any easier than that!

You can quick brown boneless breasts or thighs in a little olive oil with garlic, then pour over a can of cream of mushroom or cream of chicken soup and saute until cooked through. Add a little milk if it is too thick or salty. This is great with rice or noodles.

bake your chicken in the over with rotel and velveeta cheese. or canned soups work just as well and you can put the gravy over rice or potatoes.

um my mom uses bread crumbs that u buy in like a tall can, you dip the chicken in mixed up eggs adn then dip it into a plate of the bread crumbs and bake! i think thats how u do it!

Chicken fajita's - cook chicken and then shred it. Add package of fajita seasoning and water. Warm up some shells and add cheese, lettuce, sour cream, salsa...whatever you like! Quick and easy and everyone in my family loves them!

Make some stir fried chicken. Cut the chicken, onions, and watever veggie you want and stir fry it. Salt, pepper and soysauce if you have (if you adding soy sauce, remember to add a little sugar to balance the taste). And there you have it. Simple yet tasty dish

1 whole chicken (cut up) or the equivalent in size
2 cans of corn (14 oz)
2 cans of tomatoe sauce (14 oz)
1 can tomatoe paste (14 oz)
spices to your liking

Put chicken in bottom of large pan or crock pot add all ingredients including water from corn. Cover & let it cook on low for about 2 hours. The longer you cook it the more tender the chicken will be.

I have one that we love. It is the green bean casserole recipe that is on the back of the French's fried onions can. Make up like it says but before baking add 2-3 cooked chicken breasts cut into bite size pieces. Bake as instructions. Great with dinner rolls and mashed potatoes.

This one is as simple as it gets- and is delicious -

Just simple use Corn Flake Crumbs and add seasoning salt (to taste) - my mom usually used a fair amount.

Place the mix into a bag and throw your chicken peices (drumsticks are especially delicious)...shake very well.

Then place on a cookie sheet (using a non-stick spray such as PAM is a good idea)

Cook for 90 minutes at 350 C

This is absolutely delicious!

Baked chicken with cheese and broccoli (on top or on the side), fried chicken with a baked potato, chicken casserole (cream of mushroom soup, carrots, peas, and seasoning baked in the oven), if you have a George Foreman grill then grill some chicken breasts and make a chicken breast sandwich with lettuce, tomatoes, cheese, mayo, maybe a pickle, with toasted bread or a bun and add chips and dip on the side. Also, chicken stir fry with soy sauce and vegetables, chicken Alfredo pasta, chicken salad sandwich, or grilled chicken salad with cheese, cucumbers, dressing, etc.

Marinate chicken in a large baggie with italian dressing overnight in the refrig. turning every so often, then bread with cracker drums and bake the next day, covering pan in tin foil.

Ok so this is easy to make and envolves easy ingredients that almost everyone always has. You put oil in a pan and you saute onions and tomatoes and cook the chicken breasts in there as well. Cook in the pan until chicken is cooked. Its chicken tomatoes and onions and its really good.

baked chicken any way you want it. no need to get fancy if that is not your style. season it with your favorites, and pop it in the oven. if you want to mix it up a little, by a marinade and soak it over night.

This is always good! Marinate boneless chicken (all day) in italian dressing mixed with T garlic powder. Grill it as is or toss it with bread crumbs and bake in the oven.

EASY BAKED CHICKEN DINNER

4-8 chicken breasts, bone in or boneless
1 can cream of celery soup
1 c. brown rice (UNCLE BEN'S? whole brown rice)
1 pkg. frozen mixed vegetables

In a serving baking dish lay defrosted chicken pieces side by side.
Spread 1 can of cream of celery soup over chicken. Cover with foil and bake at 350 degrees in oven for one hour. One the stove prepare rice and vegetables as directed. Serve all 3 items on each plate using chicken cream for gravy as requested.

Serves 4-8.

Here is an easy chicken recipe that my mom made a lot.I still make it some times. NO PEEKY CHICKEN Lightly grease a 9x13 pan .Mix 1 can of cream of mushroom soup[undiluted] and 1 can of cream of chicken soup[undiluted] with 2 cups of minute rice.Put it in the bottom of the pan. Then place chicken pieces enough to cover the top. Sprinkle the top of the chicken with dry onion soup mix. Cover with foil and bake at 350 for 11/2 hours. Don't uncover the dish,you don't need to. If you have lo-sodium soup it is ok to use.Hope you enjoy it!
