I'm going camping with my 25 year old daughter this weekend. There is a charcoal grill at our site. Ideas for lunch and breakfast? I plan on chicken and salmon for dinners. Thanks.

here's a few we have used when camping..
Baggy Omlets
2 lg eggs
sausage, bacon, or ham
any of your favorite omlet vegies
shredded cheddar cheese
salt and pepper to taste
boil water over fire pit, Crack eggs in a ziplock bag. Add shredded cheese. Add meat and vegies salt and pepper to taste. Put baggy in a pot of boiling water for about 5 to 10 min. Then just cut bag off and pour in plate
Banana in foil
You will need bananas, chocolate morsels, m&m's, walnuts, or any combination of these you desire. Hold the banana in your hand with the curve pointing down. Peel back one piece of the banana peel. Cut out and remove small portions of the banana-eat pieces removed. Place morsels, m&m's, nuts etc. in the sections, place peel back over the banana and wrap with aluminum foil. Place next to the fire-and rotate occasionally, so all sides feel the direct heat. Do this for about 10 minutes. Check banana, should be softened and melted. Scoop out banana and other ingredients with a spoon and enjoy-be careful it's hot when first removed from the fire!. Time can be increased and decreased depending on the temperature of the fire.
Vegetable foil
Take a large piece of heavy duty foil, layer on top - large cabbage leaf, hamburger patty, sliced potatoes canned work best sliced carrots canned work best diced onion salt, pepper, or any other seasonings you might enjoy you can also add any other vegetables you like top with another cabbage leaf, and wrap tightly in the foil. Place in a bed of hot coals no flames turning often for about half an hour.
Chicken In Foil
1 piece of chicken per person
sliced carrots and potatoes
celery seed
salt and pepper
2 tbsp. water per piece of chicken
Place chicken in center of a piece of heavy duty foil. Add remaining ingredients. Wrap using drugstore wrap and place in hot coals. Cook for 45 minutes turning often. Variations... substitute green beans and rice for the carrots and potatoes or use lean ground meat instead of chicken. Add mushroom or chicken soup instead of water.

This is another item which works best over an open fire. Spit your wiener on a stick. Wrap the dough around the wiener. Make sure the dough is evenly and thinly spread or it won't cook properly. Roast the whole over the fire until dough is cooked and wiener is warm. Remove from stick.
If you buy a grilltop griddle, you can set it right on the grill and make pancakes, eggs, sausage, bacon, etc.
For lunch, you can have stuffed bell peppers, but you have to make them in advance. Just make them like normal stuffed bell peppers (look up a recipe if you don't have one) and wrap them in 2 layers of foil. Set them right in the coals, and they'll be ready to eat in 40 minutes.
Can be eaten for breakfast or lunch. Serve with fresh fruit and bread/muffin.
This is a super easy and everybody can have it their own way recipe but very yummy and perfect for camping.
Before you start to make the omelets you will need to set a pot of water on to boil which can be on your camp stove or over your campfire.
You need the quart size freezer Ziploc 1 for each person, then any omelet ingredients your campers prefer. A list of possibilities-ham cubes, bacon bits,diced cooked chicken, onions, green peppers, broccoli, shredded cheeses,or anything that works for you. Just set out the carton of eggs 2 per omelet and have each camper crack their eggs into the Ziploc. You can also bring a small container of half and half and put some into each bag but it works well with just eggs too. Then everyone chooses from the extras what they would like in their omelet, drops it in their Ziploc, then zips it up and puts it into the pot of boiling water. It takes approx. 3 minutes, but you can check the doneness with tongs...just lift the bag and look. It actually will roll itself up into an omelet shape inside the bag. When done just unzip roll onto your plate or into a soft tortilla, salt and pepper to taste and enjoy!!

If your going to be grilling dinner, you may want to spend less time on cooking breakfast and lunch- prep and clean up is worth the fabulous evening meal, but make the most of your time! If you are coffee addicts like my daughter and I , you will need a morning fire at least, I usually take a couple of the pre-wrapped in plastic frozen buiscuits with eggs/cheese/sausage or whatever kind you like, take out of plastic, wrap in foil, and place near the hot coals, turn them often. I have found the BEST coffee maker for camping is a melitta, simple funnel type- you just boil water and pour into the top funnel. I have never figured out the camping percolator things, the melitta has always worked great. ( take a thermos to keep it hot if you drink it slow) But for lunch- go simple. sandwiches are a great idea, and you won't be too hot and grill tired to prepare the salmon and chicken. Have a blast- great bonding time!
Camping recipes are not any different from anything you can cook at home. You will have a camping stove, right? That is just like your home stove. Anything you can BBQ at home is fine for camping. What you want to try to do is not have a big clean up after a meal and that is why the BBQ is great. For lunches I try to have things that don't require cooking or maybe something that is a one pot cooking, such as soup and sandwiches.
There is nothing better than banana boats! Take aluminum foil and add chocolate chips, and any other types of fruit and marshmallow to crisp cooked on any grill in a dutch oven or in foil, whatever you choose. They are really good though. Frozen cream on top is really good too... It's more like a breakfast dessert kind of thing though!
