depending on what you're making, substitute applesauce or pureed prunes for butter, shortening, oil and eggs.
make sure you look up the proper amount for the substitution or else your recipe will turn to crap
like if it calls for fatty things substitute those for healthier items!!! also use like crisco or something like corn oil or sunflower oil!! great tastes just healthier!!
It all depends upon what you're baking. Traditional pie crust really won't come out right if you reduce the fat content, but brownies or cake will.
You can sub applesauce for the oil in many baded good recipes.
in chocolate or dark cake mixes, ie. the spice or carrot ones you can use a can of pureed pumpkin for the oil and eggs , you may need to add d some water so the batter won't be too thick, have tried this with my family and they love the spice cake , it makes it taste like pumpkin bread so I added raisins to the next batch, bake following the box directions
of course. you can use apple sauce, or organic flour to rid some of the preservatives or even use splenda in place of sugar...or why not just find a recipe online for lower fat baked goods. i find that using recipes for diabetics helps cut a lot of calories.

Keep notes so you remember what you discover. I made a good pear cobbler replacing the oil with pureed pears, replacing the whole eggs with egg whites, replacing sugar with splenda, and used whole wheat flour. It was good enough, but nowhere near "yummy".
