Beef Jerky is actually dehydrated with very minimal cooking... Typically anything below 200F... Ideally much cooler at 140F to 160F.

In a smoker may be tough to keep the temperature that low, but worth a try.

Time any where from 5 to 8 hours depending upon the thickness and temperature. You want the jerky to be dry, but still slightly bendable.

well my fellow jerky cooker. when i was a rookie jerky cooker i also had this problem. i solved by visiting the sensei of all methods of preparing the great jerky. he lives on that mountain with the snowy tops in brazil. have fun fightin his ninjas of jerky. they but a jerky stick in a very sensitive place on me

I don't know about a smoker, but basically cook it until it's cooked.

Usually 180-ish degrees for 8+ hours, but you can tell by trying it when it's done. May take longer, may be sooner.
