Depends on what you are going to have access too. We sometimes bring a blender with us and mix up some frozen drinks like banana pina coladas, daquiris or margaritas... you can pretty much make any fruit flavor you want. If you are not going to be near a blender, then maybe you can mix some martinis and take them in a thermos. Or fruit juice cocktails if you aren't into that kind of thing... 2/3 pineapple juice and 1/3 ginger ale, or equal parts OJ, cranberry juice, and pineapple juice. If you are going to bring wine, make sure you don't bring glass onto the beach. Pour the wine into a thermos.

For the meal... again, not sure what you will have access to. A grill? Microwave? Or are you going to take something cold? Here's a sample menu from O Magazine.

chocolate covered fruit

chocolate covered strawberries, peaches, and salad.

Any and all kinds of Finger foods. I like to make a Fried chicken, (you can bake it as well) and serve it with a salad. Just make sure the peices of vegetables are bigger and you can use your hands. Also have some rolls and a nice bottle of wine. Very romantic. and you can still do the fruit thing for dessert.

For my husband and I well we take a small BBQ and grill up some shrimp on skewer already season ( I make them a home) or marinate in terriyki sauce. Unless you want to carry less stuff to carry then sandwiches (ug)
