Dessert ideas?

I am looking for beach themed dessert ideas for a christian youth group activity I am doing this Thursday. Any suggestions on where to look for good ideas? I've searched around online but am not really finding anything creative and intriging.
Help! I'm desparate for suggestions!


Answers:
Anything Tropical will go great. You can always have fresh summer fruit salad. Also, you can decorate cupcakes as beach balls or decorated sugar cookie cut outs. Use summer cookie cutters.

Pineapple Upside-Down Cake
1 -9 or 10 inch round cake
PREP TIME 20 Min
COOK TIME 45 Min
INGREDIENTS
1/2 cup butter
1 1/2 cups brown sugar
1 (20 ounce) can sliced pineapple
10 maraschino cherries
1 (18.25 ounce) package white cake mix
DIRECTIONS
Melt the butter over medium high heat in the iron skillet. Remove from the heat and sprinkle the brown sugar evenly to cover the butter. Next, arrange pineapple rings around the bottom of the pan, one layer deep. Place a maraschino cherry into the center of each pineapple ring. Prepare the cake mix as directed by the manufacturer, substitute some of the pineapple juice for some of the liquid in the directions. Pour the batter over the pineapple layer.
Bake as directed by the cake mix directions. Cool for 10 minutes, then carefully turn out onto a plate. Do not let the cake cool too much or it will be stuck to the pan.

Joe's Famous Key Lime Pie
Graham Cracker Crust
1 wax paper-wrapped package graham crackers (1/3 of a pound box)
or
1 cup,
2 1/2 Tbs graham cracker crumbs
5 Tbs melted unsalted butter
1/3 cup sugar
Filling
3 Egg yolks
1 1/2 tsp Grated zest of 2 limes
1 14-ounce can sweetened condensed milk
2/3 cup freshly squeezed lime juice
Topping
1 cup heavy or whipped cream, chilled
1 Tbs confectioners sugar
1 For the graham cracker crust:
2 Preheat the oven to 350 degrees F. Butter a 9-inch pie pan. Break up the graham crackers; place in a food processor and process to crumbs. (If you don't have a food processor, place the crackers in a large plastic bag; seal and then crush the crackers with a rolling pin.) Add the melted butter and sugar and pulse or stir until combined. Press the mixture into the bottom and sides of the pie pan, forming a neat border around the edge. Bake the crust until set and golden, 8 minutes. Set aside on a wire rack; leave the oven on.
3 For the filing:
4 Meanwhile, in an electric mixer with the wire whisk attachment, beat the egg yolks and lime zest at high speed until very fluffy, about 5 minutes. Gradually add the condensed milk and continue to beat until thick, 3 or 4 minutes longer. Lower the mixer speed and slowly add the lime juice, mixing just until combined, no longer. Pour the mixture into the crust. Bake for 10 minutes or until the filling has just set. Cool on a wire rack, then refrigerate. Freeze for 15 to 20 minutes before serving.
5 For the topping:
6 Whip the cream and the confectioners' sugar until nearly stiff. Cut the pie in wedges and serve very cold, topping each wedge with a large dollop of whipped cream.
Yield: 1 9-inch pie

Mango Cheesecake
CRUST
1 cup graham cracker crumbs
1/4 cup chopped walnuts
2 Tbs brown sugar
1 tsp cinnamon
1/2 cup melted butter
FILLING
2 cups sour cream
3 pkgs. (8 oz.) cream cheese, softened
3 eggs
1 cup sugar
1/2 tsp salt
2 tsp vanilla
zest of 1/2 orange
2 1/2 cups mango puree
Directions Mix all crust ingredients and press into bottom of springform pan. Thoroughly mix sour cream, cream cheese, eggs, salt, vanilla, orange zest and mango puree. Beat well with an electric mixer. Pour into springform pan. Place pan in bain marie (water bath) and bake 2 1/2 hours at 350'. Increase temperature to 400' and bake 20 minutes more. Let cool before serving.

Lemon Crumb Bars
These refreshing lemon bars will delight kids of all sizes and are a great addition to your cookie collections. Bake a batch for a summer picnic or family outing.
1 (18 1/4-ounce) package lemon or yellow cake mix
1/2 cup (1 stick) butter or margarine, softened
1 egg
2 cups finely crushed saltine crackers
3 egg yolks
1 (14-ounce) can EAGLE BRAND?? Sweetened Condensed Milk (NOT evaporated milk)
1/2 cup lemon juice
1 Preheat oven to 350°. In large bowl, beat cake mix, butter and 1 egg with mixer until crumbly. Stir in saltine crumbs. Reserve 2 cups crumb mixture, set aside. Press remaining crumb mixture on bottom of greased 13x9-inch baking pan.
2 Bake 15 to 20 minutes or until golden.
3 With mixer or wire whisk, beat 3 egg yolks, EAGLE BRAND and lemon juice. Spread over prepared crust. Top with reserved crumb mixture.
4 Bake 20 minutes longer or until set and top is golden. Cool. Refrigerate within 2 hours. Cut into bars. Store covered in refrigerator.
Servings: 24
Preparation time: 15 minutes
Cooking time: 35 minutes
Ready in: 1 hour and 5 minutes

what about a fruit salad with fresh fruits, kids like watermelon, brownies, cup cakes, beside kids that age they eat almost anything. Go look for jello moles with beach theme. Trust me kids don't really notice things like that so save yourself some time, any desert will do.

BEACH BALL COOKIES

2 c. sugar
1/4 c. cocoa
1/2 c. milk
1 stick butter
1/2 c. peanut butter
1 tsp. vanilla
3 c. rolled oats
1/4 c. coconut (optional)

Put the sugar, cocoa, and milk in a saucepan. Boil for 1 minute. Put all the other ingredients in a bowl and mix. Add boiled cocoa mixture. Stir well. Roll into little balls. Roll in coconut, if you like.

BEACH BUCKET CAKE

1/2 c. butter, softened
1 (8 oz.) pkg. cream cheese, softened
1/2 c. powdered sugar, sifted
3 1/2 c. milk
2 (3 1/2 oz.) pkg. instant vanilla pudding
12 oz. frozen whipped topping, partially thawed
1 (20 oz.) pkg.) sandwich cookies, crushed
1 plastic sand pail & shovel, gummy worms (for garnish)

Blend butter, cream cheese and sugar with mixer. In second bowl blend milk and pudding. Add the whipped topping to the pudding mixture, then combine the 2 mixtures.
Start layering the cookie crumbs and the creamy mixture in the pail. Making several layers of each, ending with crushed cookies on top. Cover with plastic wrap and refrigerate several hours.

BEACH CUPS

Vanilla wafers
Lemon or vanilla pudding ready made
Teddy grams or gummy bears
Paper umbrella toothpicks

In a clear Dixie cup, crumble some vanilla wafers. Cover with pudding and then top with another layer of crumbled cookies. Stand up 2 teddy graham cookies under a paper umbrella toothpick.

1. Lightly coat the entire cake with a thin layer of blue frosting. Swirl extra blue frosting on two thirds of the cake to create the ocean with waves and a curvy shoreline. Add whitecaps by squirting white frosting through a pastry bag.

2. To make the sandy beach, sprinkle graham cracker crumbs on the remaining third of the cake (the crumbs will stick to the thin layer of frosting). Next, let your kids help you turn the cake into a bustling beach. Arrange a circle of candy rocks around a candle bonfire.

3. Add Hawaiian dancers, a candy flower path, plastic palm trees, Fruit Stripe gum surfboards, plastic swimmers, LifeSavers tubes, sour tape beach blankets, and paper parasols. Don't forget to stock the ocean with edible and decorative sea creatures.

Ingredients:
Pure Madagascar Vanilla Extract
Lemon Yellow Tubed Icing
White Tubed Icing
1 cup butter, softened
2/3 cup confectioners' sugar
2 teaspoons Pure Madagascar Vanilla Extract
1/8 teaspoon salt
2-2 1/4 cups all-purpose flour
1/2 cup shelled and chopped pistachios
Preheat oven to 325°F. Spray pan with vegetable pan spray.

In mixer bowl, cream butter, sugar and vanilla. Add salt, then flour, one cup at a time. Mix until dough is smooth. If dough feels sticky, add an additional 1/4 cup flour as needed. Dough should be soft, but not sticky. Stir in nuts. Press into prepared pan and bake 20-25 minutes or until lightly browned. Cool in pan 10 minutes. Loosen edges gently with thin spatula and turn out onto serving platter before decorating.

Optional Decorating Instructions:

Pipe lemon yellow stars with tip 15 in the center of the cookie. Outline the petals of the flower for definition with tip 5 in white or favorite color.

Servings: 6-8

Sand Cake

Be sure to pile this cake into a beach bucket and serve with a plastic
shovel!

This project is rated VERY EASY to do.

What You Need



2 Packages (3.5 to 4 oz. each) vanilla-flavored instant pudding
4 cups milk
1 container (8 oz.) nondairy whipped topping
1 box (10 1/2 oz.) miniature chocolate-chip cookies
2 cups vanilla-wafer cookie crumbs, divided
Shell and or pebble shaped candies


How To Make It


Prepare pudding using the 4 cups milk, according to package directions.
Using rubber scraper, fold in the whipped topping, then fold in chocolate
chip cookies.

Spoon half of the pudding mixture into a clean (preferably new) 2 1/2 quart
plastic beach bucket. Sprinkle with half of the vanilla cookie crumbs.
Repeat layers. Cover and refrigerate at least 4 hours to soften cookies.
Decorate with candy shells and pebble candies. Refrigerate until ready to
serve.

When placing on table put sand, sea shells, and plastic fish around the
bottom of bucket for a cool centerpiece.

Shimmering Tropical Fruit

1 can of tropical fruit salad
1 package lemon or peach gelatin
8 sprigs parsley

1.make the jello mix
2. strain fruit
3.add fruit to liquid jello
4.let solidify
5.add parsley to edges



Fruit and juice shake

1 ripe banana, peeled
3/4 cup pinapple juice
1/2 cup vanilla yogurt
1/2 cup straberries, stem removed

1.break banana into tiny pieces
2. blend all ingredients together
3.put in conut glasses w/straw and umbrella

Have you ever heard of the Duggar family. On their website they have recipes that feed a large number and some of them are really good. Check it out.

I would bake some cupcakes, ice them with buttercream and then sprinlkle brown sugar on them to resemble sand. You could then top them with a chocolate shell
