What is the best cut of pork to use: shoulder, tenderloin, etc?

Answers:
The best cut to use is called a Boston Butt, Definatly not tenderloin, not enough fat and your meat will be dry as for the seasoning that is stricktly a matter of taste. I prefer to leave mine plain put it on a smoker for about 7-8 hours @ about 250. Then pull it and cover it with your favorite sauce.

look for bubba stubb's marinades n sauces...they sell em in my ralphs n other places. i love their sauces n marinades. for bbq my favorite cuts r boneless country pork ribs, regular pork ribs, or my bfs specailty (one of his many!) pork tenderloin. if u r a timid cook, just stick to the bottle to start. if u r a brave chef, mix a bunch of spices, seasoning blends etc, coat it n bast in a delicious blend of soy sauce, ur favorite bbq sauce, orange juice, maybe some salsa for a kick...as far as cooking times n temperatures, idk, we wait for it to look right, figure in thickness of the meat n how well done we want. i will recommend just looking up a chart for times n temperatures. most cook books will have a chart. find out about cooking methods, direct heat vs indirect etc, and how to get ur coals just right. bbq is great cuz it is part art part science, part fun part food. enjoy the rocess n just do it a lot n u will ge the hang of it :)

Pesto Pork Tenderloin


Ingredients
1/3 cup Dried Tomato & Garlic Pesto Mix
1/4 cup olive oil
1/3 cup water
1 diced tomato
1 Tbsp. chopped Kalamata olives
1 Tbsp. Balsamic & Basil Dipping Oil
1 lb. pork tenderloin, cut into 1-inch strips*
2 beaten eggs
1 cup fine dry breadcrumbs
Vegetable oil
2 - 3 Tbsp. crumbled feta cheese

Directions
Prepare Dried Tomato & Garlic Pesto Mix as directed on jar with olive oil and water; set aside. Combine tomato, olives and Balsamic & Basil Dipping Oil; set aside. Pound pork strips flat between two sheets waxed paper to 1/2-inch thickness. Spread Dried Tomato & Garlic Pesto Mix on both sides of pork. Dip each strip into egg and then breadcrumbs. Cover bottom of large skillet with oil; heat over medium heat. Fry pork strips 3 minutes on each side or until browned and meat is done. Top each pork strip with a dollop of tomato mixture; sprinkle with feta cheese. Makes 4 servings.

*May use boneless chicken breasts.
