What is a good item to bring to a picnic?

I have to bring a couple things to a potluck picnic. I would like something, easy & unique...not your typical potatoe salad. thanks in advance.....

Lemon Bars or rum cake. Hold on Ill get some recipes.

Golden Rum Cake
The butter rum glaze makes it special. An easy way to glaze your cake is to pour half of the glaze into Bundt pan, reinsert cake, then pour the rest of glaze over the bottom of the cake. Let absorb well then invert back onto platter.
1 cup chopped walnuts
1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
1/2 cup water
1/2 cup vegetable oil
1/2 cup dark rum
1/2 cup butter
1/4 cup water
1 cup white sugar
1/2 cup dark rum
1 Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Sprinkle chopped nuts evenly over the bottom of the pan.
2 In a large bowl, combine cake mix and pudding mix. Mix in the eggs, 1/2 cup water, oil and 1/2 cup rum. Blend well. Pour batter over chopped nuts in the pan.
3 Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean. Let sit for 10 minutes in the pan, then turn out onto serving plate.
4 Brush glaze over top and sides. Allow cake to absorb glaze and repeat until all glaze is used.
5 To make the glaze: in a saucepan, combine butter, 1/4 cup water and 1 cup sugar. Bring to a boil over medium heat and continue to boil for 5 minutes, stirring constantly. Remove from heat and stir in 1/2 cup rum.
Servings: 12

Black Bean And Corn Salad
This salad is very colorful and includes a very tasty lime dressing.
1/3 cup fresh lime juice
1/2 cup olive oil
1 clove garlic, minced
1 tsp salt
1/8 tsp ground cayenne pepper
2 (15 ounce) cans black beans, rinsed and drained
1 1/2 cups frozen corn kernels
1 avocado - peeled, pitted and diced
1 red bell pepper, chopped
2 tomatoes, chopped
6 green onions, thinly sliced
1/2 cup chopped fresh cilantro (optional)
1 Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.
2 In a salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, green onions, and cilantro. Shake lime dressing, and pour it over the salad. Stir salad to coat vegetables and beans with dressing, and serve.
Servings: 4

Crispy Cucumbers and Tomatoes in Dill Dressing
Crispy cucumbers, fresh tomatoes, and onion add spark to this simple summer salad.
1/4 cup cider vinegar
1 tsp white sugar
1/2 tsp salt
1/2 tsp chopped fresh dill weed
1/4 tsp ground black pepper
2 Tbs vegetable oil
2 cucumbers, sliced
1 cup sliced red onion
2 ripe tomatoes, cut into wedges
In a large bowl, mix the vinegar, sugar, salt, dill, pepper, and oil. Add cucumbers, onion, and tomatoes. Toss, and let stand at least 15 minutes before serving.
Servings: 6

Pink lemonade and chicken salad sandwiches made on croissants.

You will love this, get some pinto beans and hamhocks or bacon ends from the store and throw the both of them in a crockpot for about 6-8 hours. It's awesome. Throw in some cornbread and you'll be the hit of the picnic. Or make some margarita popsicles!!!

An angel food cake with lemon glaze is nice, light and summery! And super easy if you use a boxed cake mix! Here's the recipe for the glaze....

1 cup confectioners' sugar
2 tablespoons fresh lemon juice
1 1/2 teaspoons grated lemon zest
Pinch of salt

If you have a cooler, pack it with ice and bring fresh, cut up fruit. Dig out half a watermelon and pack it with grapes, cut up watermelon, strawberries, pineapple, apples, oranges, and any other type of fruit you can think of. Refrigerate it over night so it is nice and cold. There isn't anything better than fresh, cut up fruit for all!

Depends on the crowd of course... 7 layer dip - make your own seven with whatever you like (meat, refried beans, sour cream, guac., salsa, lettuce, tomatoes, pico, onions, olives etc). Fruit pizza - roll out some sugar cookie dough, bake, cool, top with cream cheese and fresh fruit - I loved this when I was a kid but i don't see it much anymore. Individual quiches made from the mini premade pie shells.

The best item to bring would probably be... the picnic basket!

FRUIT!! Carve a watermelon into a basket and hollow out. Fill with chunks of watermelon, pineapple, honeydew, cantaloupe, strawberries, blueberries, & grapes. Serve with whipped cream and a fruit dip. If possible, use a hollowed out pineapple or cantaloupe as the dip bowls. Everyone loves fruit, and the carving of the watermellon and use of the pineapple or cantaloupe as bowls makes it even better!

Another idea is use some clear plastic cups and layer yogurt, granola and berries. Garnish with 1/2 strawberry.

caramel brownies, italian macaroni salad, assortment of dips with crackers, vegis, fruits, etc., bbq beans, fruit kabobs

i really enjoy making piggies in a blanket == grown-ups and kids love them and since they are finger foods they are perfect for a picnic--

crossant rolls-- hotdogs-- and cheese

unroll crossants--put cheese on each roll and 1 hotdog and roll crossants like normal-- bake at directed temp until brown-- they are fantastic-- good luck and it is EASY!

bug spray aren't there always ants associated with picnics so my answer would be bug spray

how about pasta salad or a vegetable tray.

Bake Beans
4 or 5 cans of campbells pork and beans then add ketchup, mustard, brown sugar, chopped onion, karo syrup, and lil smokies and bake them in the oven for 35-45 minutes at 350'. Talk about delicious.
I sometimes use beef smoked sausage or kielbasa pieces instead of the lil smokies. =0)

Hashbrown Potato Casserole
2 pounds. frozen hashbrowns potatoes, thawed
10 oz pkg cheddar cheese, grated
8 oz. sourcream
1 can cream of celery
1 tsp. salt
1 tsp. pepper
1/2 stick butter, melted
Mix all other ingredients together. Put in greased casserole. Bake at 350' for 45-55 minutes.

Make it cute! Put smilee faces on your sandwiches, and make your fruit look like some other kind of object, stab toothpics attached to other foods, like celory or rasins, and make it look like bugs or something! I saw someone do this, it was funny!
