Im Quite bored right now and feel like baking.
Im looking for something good and unhealthy.

CARIBBEAN FUDGY BROWNIES

1/2 cup butter
3 ounces unsweetened baking chocolate
1 1/4 cups sugar
1 teaspoon vanilla
1 teaspoon spicy or dark rum
1/8 teaspoon Jamaican allspice (optional)
2 eggs
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Pre-heat oven to 350°F.
Grease 8 inch square baking pan, greasing only the bottom and leaving the sides ungreased.

In a medium saucepan, stir together chocolate and butter over low heat setting until smooth, about 5 minutes. Remove from heat. Stir in sugar.

Whisk in eggs, one at a time, stirring well after each addition. Stir in flour, baking powder and salt, vanilla and rum; stir only until mixture is smooth and all ingredients are combined.

Spread mixture into baking pan.

Bake for 25 to 35 minutes or until brownies just begin to pull away from sides of pan. Watch carefully near later stage of cooking period to prevent overbaking or brownies may become dry. If your brownies consistently are dry or overbaked, try reducing oven temperature by 25 degrees.

Allow to cool before slicing into squares.

Note: To make a double batch, double all ingredients and use a 13x9 inch baking pan. Bake 35 to 40 minutes.

VARIATIONS: Add one of the following - 3/4 cup walnuts, pecans, macadamia nuts, raisins, chocolate or peanut butter chips, or sprinkle chocolate chips over top just before baking.

If you like your brownies a little lighter, add 1/4 teaspoon baking soda and a teaspoon of molasses.


TRIPLE CHOCOLATE FUDGE

1/2 cup butter
4 1/2 cups sugar
1 can (1 1/2 cups) evaporated milk
4 1/2 cups mini marshmallows
2 cups chocolate chips (semi-sweet)
1 12 oz bar sweet baking chocolate, chopped
2 1 oz squares unsweetened chocolate, chopped
2 teaspoons vanilla extract
1/2 teaspoon butter rum schnapps or amaretto
1 cup pecans, walnuts or macadamia nuts, chopped

Line a brownie-sized baking pan with wax paper or foil, covering sides of pan. Spray with non-stick spray or grease foil with butter.
Combine butter, sugar, and evaporated milk (do not use sweetened condensed milk) in a saucepan stirring over medium heat until butter is melted and sugar is dissolved.

While constantly stirring, turn to high heat and allow to reach a rolling boil. Once mixture is boiling, stop stirring and allow to boil for an additional 5 minutes, then remove pan from heat.

Stir in marshmallows; when melted, add chocolate and continue to stir until all is melted and well combined. Stir in flavorings (vanilla and butter rum or amaretto), then add chopped nuts.

Immediately spread mixture in the lined baking pan. Sprinkle with demerarra or colored sugar (optional).

Allow to cool at least one hour before cutting into squares for serving

HERMIT COOKIES

1 1/3 cups brown sugar
1 cup butter or Crisco
3 eggs
1 teaspoon baking soda
1/2 teaspoon nutmeg
2 1/2 cups flour
1 cup raisins
1 cup currants
1/2 cup hot water
1 cup chopped nuts

Combine brown sugar, butter or Crisco, 3 eggs, baking soda, nutmeg, and flour in bowl.
In a small saucepan, combine raisins, currants, hot water, and boil five minutes. Cool, and then add to above mixture. Stir in chopped nuts.

Drop in spoonfuls onto greased baking sheet and bake at 300° about 15 minutes or until done, which varies according to the size of the cookie created.

Chocolate Cake. (diabetic)
120 g Margarine.
2 t Artificial sweetener.
1 C Wholemeal flour.
1 C White flour.
2 t Baking powder.
3 T Cocoa.
? t Baking Soda.
2 Eggs.
125g Unsweetened Natural Yogurt.
? C Reduced fat milk.

Whip together the margarine and sweetener. Sift the dry ingredients together. Lightly beat the eggs with the yogurt and milk.
Combine all ingredients together. Pour into a lined cake tin and cook for 30-40 minutes at 180C.

Cut into 16 pieces.

Honey-Baked Bananas

INGREDIENTS

5 medium firm bananas. sliced
2 tablespoons and 1-1/2 teaspoons butter or margarine, melted
1 tablespoon and 2 teaspoons honey
1-1/4 teaspoons lemon juice
1/2 cup and 2 tablespoons flaked coconut, toasted
1/2 cup and 2 tablespoons chopped pecans, toasted
whipped topping

DIRECTIONS

Place the bananas in a greased 1-qt. baking dish. Combine the butter, honey and lemon juice; drizzle over bananas. Bake, uncovered, at 350 degrees F for 10-12 minutes or until heated through. Sprinkle each serving with coconut and pecans; top with a dollop of whipped topping.

Chunky Choc.Chip Peanut Butter Cookies

1 1/4 cups flour
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. salt
3/4 cup soft margarine
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 large egg
1 tsp vanilla extract
2 cups semi sweet choc. morsels
1/2 cup coarsley chopped peanuts
Preheat oven to 375 F
Combine flour , baking soda, cinnamon and salt in bowl. Beat butter, sugar , brown sugar and peanut butter in large bowl-until creamy
Beat in egg and vanilla extract, gradually beat flour mixture- stir in morsels and peanuts
Drop tbsp. onto baking sheet. Press down slightly with fork to flatten 2" circles

bake 7-10min until edges are set but centres are still soft. COOL -bake sheet for 4min , remove onto wire rack = 3 dozen*

Saucege & cheese stuffed mini mushrooms

1 lb. med. fresh mushrooms cleaned
1/4 cup kraft zesty italian dressing
1/2 cup hot italian saucege -cooked and crumbled
1/2 cup kraft part skim mozzerella shredded cheese

Remove stems from mushrooms, brush mushrooms with dressing and place on broiler pan - broil for 5 min

Press saucege evenly into mushroom caps using 1/2 tsp saucege in each cap, sprinkle evenly with cheese....Broil an additional 5min until cheese is melted-serve hot. Serves 12 (2 mushrooms each)

TIP> To easily crumble saucege...cut off the tip and squeeze meat out into frying pan*

PIZZA FRITTATA

6 eggs
2 tbsp. milk
1/2 cup finely grated mozzarella cheese
1/2 tsp. dried basil
1/4 tsp. salt
1 tsp. ea butter and oilve oil
1/4 cup diced red pepper
1/4 cup chopped tomato
2 tbsp. diced pepperoni or ham

1) preheat broiler - in large bowl whisk eggs with milk, 1/4 cup mozzerella, basil and salt. Heat butter and oil in a large non stick fry pan over med heat-when it begins to bubble, add egg mixture
2) cook just until edges set...use spatula, lift up edge and tilt pan, letting uncooked egg run into pan, continue to cook until nearly set.
3) sprinkle with red pepper , tomato and pepperoni and top with remaining cheese. If fry pan handle is not heat proof, wrap in foil, place under broiler until cheese melts (1min) loosen edge, use spatula on cutting board, cut into wedges

TUNA RANCH CASSEROLE

8 oz pasta + 3/4 cup chopped onion + 2 cups frozen veggies + 2/3 cup bottle ranch salad dressing + 1 can (6oz) tuna drained + 1/4 cups shredded cheese.

Preheat oven to 375F- cook pasta, drain, reserve 1/2cup of pasta water, Coat large skillet with cooking spray, Heat over med. heat,. add onion, cook 5min. Add veggies and 1/4 tsp pepper cook 5min ..stir in dressing, tuna, reserved pasta & water- Remove from heat , stir in 1 cup cheese, Transfer to 2 qt. dish , sprinkle with remining cheese, bake until golden (about 20min)

Death by Chocolate
1 box chocolate cake mix
4 sm boxes of Instant Choc. pudding
4- 8-oz. cool Whip
Bake cake according to directions.
and prepare pudding according to box.
When cake is cooled.
Layer as follows: This really looks nice in a glass pyrex dish or a trifle bowl.

16 oz. cool whip
