Beat one egg with a teaspoon of water.Heat1tsp. of butter in non-stick pan on medium heat,Pour in the egg and swirl pan back and forth to get egg going round and round in pan,Use a spatula made for non-stick pans to help push eggs around and put little holes through the bottom of the omelette while cooking until almost cooked through ,Toss some cheese on top,I like goat cheese.Fold one side over the other and slide onto plate.Sprinlke with fresh herbs like basil or parseley,serve with sliced tomatoes topped with fresh black pepper.Salsa would be good on top too.Enjoy

You could do it with one egg and a splash of milk. Add a little grated cheese.

Put the mix into a very small non-stick saucepan (one with a small diameter) and bake it on the stovetop until the bottom has set. You can then transfer it under the grill to cook the top so you dont have to 'flip' it. When the top is browned or cooked to your liking it will slide from the saucepan and you could fold it as you put it onto the plate.

Of course you have to flip it.

Flip it when it is still liquid on top. Quickly add ingredients, fold and serve.

Flip it with a spatula if you don't want to toss it.
