Can dark sesame oil spoil?!

Can dark sesame oil spoil?

I bought some and it smells like burned...something. Is it supposed to smell that way?

Dark sesame oil is made from roasted sesame seeds. It has a very nutty aroma and flavor. Some brands are darker than others, though. It should not be darker than a light caramel. Sesame oil is highly perishable, too, and keeps longer if refrigerated.

It does spoil...and becomes rancid. Toss it.

I was going to suggest keepiing in the fridge too. I have some of the lighter oil and it's been in my fridge for a couple of years and it is still okay.

It should have an intense roasted sesame scent, the roasting of the sesame seeds before extracting the oil, is what may give it the burnt smell. It is very perishable outside of the refrigerator, it will last for a very long time in the fridge.

It's actually not burned, it's toasted. If it were a light color the sesame seeds were not toasted first. If it's the darker color then the sesame seeds were toasted first. It does have an intense smell. It should smell of roasted/toasted sesame seeds. If it doesn't then use your best judgment and throw it out. Or you can take a taste of it. If it's rancid you should know when you taste it.
