I like italian dressing as a marinade just pour and put in fridge overnight. I usually add extra garlic because I like it. Throw on the grill for a smoky flavor or in a hot skillet to seal the juices.
I marinade mine with greek seasoning and Honey Brown Beer for flavor. I sually let sit for 2 hours or overnight.
Rib-eye isn't a typically marinated steak--The fattyness is is why you buy it. I usually marinade my strips with a mixture of soy sauce, spices and Brown Sugar for at least 15 min---Makes the meat melt in your mouth.
Ever watch the Food Network? One thing I learned and holds true is this..nice Ribeyes don't need marinades! It toughens the meat due to all the liquids, hense causing the meat to be tough, and dried out tasting. The best way to give your ribeye some flavor is rubs!
Try this, it's my favorite, and it doesn't over power the juiceyness of the meat.
Lightly brush on an extra virgin olive oil
select your flavor of rub, mine is Char Crust -Roasted Garlic Peppercorn made by Kosher
Then sear the steaks, and cook to desired doneness.
A rub, trust me, is much better on a good meat than any marinade!
Rib eye steaks are heavily marbled, so they don't need marinades. The fat gives it the flavor.
Cook it until it's pink in the middle and brown on the outside.
while this is not exactly a marinade, it does work on the meat over time.
first, wash your steaks and dry well.
on a clean dish towel, lay out a thick layer of kosher salt as large as your steak.
place steak on salt, and cover top of steak with layer of salt.
wrap towel around steak and place in fridge at least overnight, longer will let the steak age more
before cooking brush off any remaining salt, and rinse the steak.
dry well, and keep dry towel wrapped around steak
heat grill to its maximum temp and place steak over max heat to get good crust.
the salt draws out much of the moisture from the steak, which can cause it to steam on the grill. the steak will not be dry, because the fat, and the natural juices from cooking will develop as the meat cooks.
