Answers:
Welcome to Germany
Sweet and Sour Red Cabbage

Ingredients:
1 large red cabbage
4 tablespoons bacon fat
1 medium onion, chopped coarsely
1/2 teaspoon salt
2 tart apples, cored and sliced (Granny Smith is my favorite)
1/4 cup boiling water
1/2 cup vinegar
1/3 cup brown sugar

Prep:
Remove the outer leaves and hard core from cabbage and chop coarsely.
Heat the bacon fat in a large skillet or kettle. Add onions and slowly cook until tender.
Add the cabbage and salt. Cover and steam for 10 minutes.
Add apples and 1/4 cup boiling water.
Cover and simmer over low heat for 1 hour or until the cabbage is tender.
Add the vinegar and sugar and continue to cook 15 minutes longer.
Serve hot.
NOTE: Sugar and vinegar amounts can be varied according to your family's tastes.

ireland Fruit Preserve Sandwich Cookies

INGREDIENTS

1 cup all-purpose flour
1/4 cup butter
1 egg
2 tablespoons ground almonds
1/4 cup white sugar
1 cup any flavor fruit jam
1/3 cup confectioners' sugar for decoration

DIRECTIONS

Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets.

Sift the flour into a bowl and cut in the butter or margarine. Mix in the sugar and almonds. Using a fork, mix in the egg until dough becomes stiff.

Knead dough on a lightly floured surface until smooth. Roll out dough into a thin layer and cut into rounds, 2 inches wide. Re-roll trimmings and cut until you have 20 rounds. Place rounds on cookie sheets.

Bake for 12 minutes in the preheated oven, or until light brown.

Let cool on the sheet for about 3 minutes, then transfer to wire racks.

When biscuits are completely cold, spread half of the rounds with a thin layer of preserves and sandwich together. Dust with confectioners' sugar.
