BEEF BRISKET MARINADE

1 pkg. dry onion soup mix
1 bottle Bar-B-Q seasoning
1 tbsp. lemon pepper
1 tbsp. chili powder
1 tbsp. seasoned salt
1 tbsp. celery salt
Garlic salt
1 bottle liquid smoke
1 tbsp. rosemary

Marinade overnight. Wrap in foil and bake at 325 degrees for 4 hours.

dales sauce

grape jelly and beer

wishbone italian dressing

I like to do a rub on a brisket if you are going to cook it on the grill. Stick it with a big fork or knife all over to make holes in it. Then rub the rub all over and let set overnight.

Or you can marinade it in Italian salad dressing if you want to do it with a wet marinade.

Half orange juice and half Worchesheir (sp?) sauce.

The citric acid in the juice and the salt in the Worcheshier will break up the cells in the meat and make it tender.

Marinate it over night.

Add some sliced hablamos or jalapenos if you like spicy stuff.

Canadian (or Montreal) steak seasoning and beer.

Claude's Brisket Marinade. Soak the brisket in the marinade for 24 hours, turning occasionally if needed. Pour off about 3/4 of it. Add lots and lots of sliced onions. Cover roaster and cook at 250 deg F for 8 - 10 hours. (8 for smaller brisket, 10 for larger.)
