Baking Banana Bread?? Substitution question??

I have a simple Banana Bread Mix (from Trader Joe's)....it calls for 2 large eggs, 1/3 cup of veg.oil and 3/4 cup of water....

My question is : If I add one or two bananas to the mix will it be too mushy, or should I substitute the bananas for a egg or the oil???

Go ahead and add them but add a little flour to the recipe and about a 1/2 tsp of baking powder as well. when you add a wet item to a recipe always add a bit more dry as well and when increasing the dry you should always add a bit of the rising agent as well but not too much. As for cooking time you may need to increase the time a bit. If you are using an oven that bakes very hot you may want to consider lowering the baking temp by about 25 degrees to compensate for the longer baking time and to avoid too dark a finish on your loaf.

I don't know about substitutions...but if you have a lot of bananas, why don't you make REAL banana bread (no mixes)

If you need to use more bananas then you should increase the other ingredients too. Make a double batch.

If there are already bananas in the mix then only add one or two more of your bananas. Don't leave out any oil or eggs. Cook according to the directions and it's done when you insert a tooth pick and it comes out clean.
By the way I add about one tablespoon of orange zest to my banana bread and it's great.

I think it would work fine. I would follow the recipe and just add the bananas. It will probably make it more moist. I add lemon juice, orange juice, apples, etc to mine sometimes. good luck.

I always add bananas to my banana bread in place of the oil 1 or 2 either way should not make much of a difference. As far as bake time just insert a toothpick and when it comes out semi clean you can take it out of the oven. Good luck!

You can substitute one egg for a banana. You might be able to leave the egg out all together but I would have to see the mix ingredients. I think one of each would be best.

You can safely add 2 of the bananas to this mix. It will still cook within the recommended baking time listed on the package. Be sure to mash the bananas well so that they stir into the batter evenly. You could also add 1/2 cup chopped nuts, too.

I add bananas to mixes all the time...it makes them a little more moist, and tastier.

I think you can still add one banana, chop it up coarsely and add it to your cake mix. Bake the same time as per instructions. This will just add more flavor to your cake.

There are lots of easy to follow recipes on the internet. I'd suggest you follow one to use up the bananas, and save the Trader Joe's mix for a time when you have no bananas.

Why not make the bread from scratch this time and save the mix,

Here is the first recipe that I found on the web.

The mix is basically just the flour, baking soda, and sugar. You can use white sugar instead of the brown this recipe calls for and oil instead of the margarine.

SERVINGS About scaling and conversions

INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Whenever I bake banana bread, muffins, or cake I ALWAYS use more bananas than I am supposed to. If they are turning brown they will be far sweeter than yellow ones. Generally, as a rule I add between 5 and 9 minutes cooking time but I do keep a close watch during that extra time. ALSO... you can wrap the ripened banana's in saran wrap and then put them in a ziplock and freeze them for later use.
