Sweet Cherry recipes?
Sweet cherries were on sale, and I bought a gazillion pounds of them. Anyone have a favorite recipe for them? I love to bake, so any muffin, bread, pie recipe will be greatly appreciated!

here's a couple that i have tried that was really good...
Clafoutis-a french desert
4 eggs
2/3 cup sugar
1/4 cup flour
1 cup milk
1 tsp. vanilla
2 cups sweet cherries, halved, pitted
3 squares Semi-Sweet Baking Chocolate, chopped
1 cup thawed cool whip whipped topping
preheat oven to 375F. Beat eggs, sugar, flour, milk and vanilla in small bowl with electric blender on medium speed 30 sec. or until well blended. spread cherries evenly onto bottom of greased 9-inch pie plate, cover with batter. Sprinkle evenly with chocolate. bake 40 to 45 min. or until top is puffed and golden brown and center is just set. cool 10 min. Top with the whipped topping just before serving.
Sweet Dark Cherry Pudding Cake
1 cup all-purpose flour
3/4 cup white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup lactose-free milk or soy milk
3 tablespoons vegetable oil
2 cups pitted sweet cherries
1 cup brown sugar, packed
1 teaspoon cinnamon
1 cup boiling water
1 tablespoon lemon juice
Heat oven to 350F. In a large bowl, stir together the flour, sugar, baking powder and salt. Stir in the milk and vegetable oil just until smooth, do not over mix. Spread batter into an ungreased pan. Arrange cherries in a single layer over batter. Toss together the brown sugar and cinnamon to combine, sprinkle evenly over cherries. Stir lemon juice into boiling water and pour slowly over the cherries and brown sugar. Bake 55 to 60 minutes or until a wooden pick comes out clean.
here's an excellent pork recipe with cherries, even my kids loved it..
Pork Medallions with Cherry Sauce
1 pound pork tenderloin
Nonstick spray coating
3/4 cup cranberry juice or apple juice
2 teaspoons spicy brown mustard
1 teaspoon cornstarch
1 cup sweet cherries
Take meat and trim away fat. Make meat into 1-inch thick slices by cutting crosswise. Take two pieces of plastic wrap for each slice of meat and place meat between them. Press each slice into a 1/2-inch thick medallion using the heel of your hand. Take plastic wrap and remove it from the meat. Using salt and pepper sprinkle lightly over the meat. Using nonstick coating spray an unheated large nonstick skillet. Over medium-high heat take the skillet and heat over. Place meat on the heated skillet and cook meat for about 4 to 6 minutes or until the meat is slightly pink in the center and the juices in the meat run clear. Turn the meat over once. Remove the meat from the skillet and keep warm. Take the cranberry or apple juice, mustard, and cornstarch and combine them together, then add them to the skillet. Mixture should be cooked on skillet, cook and stir until it becomes thickened and bubbly. After mixture is thickened and bubbly cook for an additional 2 minutes. Take cranberry mixture and stir in cherries. Pour mixture over meat and serve.
If I had a gazillion of them I would make bread.
I don't know the exact recipe but if you go to allrecipes.com I bet you would find one.
I would probably just use my recipe for zucchini bread using chopped cherries instead. I have done that with chopped apples and peaches.

Okay, this not baking, but I am sure you will fall in love with it.
Cherries stoned (boring I know, but worth the effort)
Sugar or sweetener to cover layer of cherries
Cinnamon stick
Cloves (wrap in a bit of muslin for easy extraction at the end)
Water to cover fruit etc.
Red fruit juice, I like pommegranate as it is a mild flavour.
Potato flour or cornflour - neither of which give flavour, but potato flour gives a clearer coloured finish at the end. You could use agar agar, but I do not know how to use that).
Put all except the potato flour into a saucepan and bring to a boil. Also not the juice.
Reduce the heat to a simmer for about 20 mins to 30 mins once the fruit has gone soft.
Remove the cloves and cinamon stick.
Cool enough to go into a food processor or blender - this is why you need to stone your cherries carefully.
Whiz until smooth and return to pan.
Taste and adjust sweetness - ie by adding lemon.
Add the fruit juice and bring to a boil.
Put your chosen form of thickening in and stir. Remove from heat, and serve immediately hot, or cold, both with whipped cream and maybe a sweet biscuit.
