let me just look over my shoulder and see how many different staislaus products are on my shelves. okay....five. here's the line on stan. they are a family owned company that refuses to deal with the big suppliers,ie. sysco, alliant foods etc., because they don't want to be told how to do things. by staying small, they still control their company. they reach out to their customers for feedback(me,not my supplier), send cute presents x-mas time, and generally have the best tomato product line for twice what they actually charge. find a small supplier in your area. if they don't carry it, they'll know who does.

Actually, yes, they're great. I'm a total foodie and am big into pizza and other Italian food, so I tend to use a lot of canned tomatoes, and I've done my homework. In particular, there's a brand called 6-in-1 All Purpose Ground Tomatoes. Yes, it sounds like a generic version. For years, I saw them and just walked past, in favor of other brands, organic versions, fire-roasted types, etc. Basically, I was being snooty. But then I learned.

The taste is natural and fresh, sweet with just a bit of bite -- without a doubt, the best you can buy.

For those who ask, "Well, why not FRESH tomatoes?" A few reasons. Most important, the flavor varies wildly when they're not in season. Most supermarket brands blow, and they're ripened with chemicals. The best "real" tomatoes are actually heirlooms, which tend to look ugly. That's not a problem if you really like them, but it means they aren't carried at most places except farmer's markets -- that's the drawback. Another problem with using fresh is that, typically, you want to peel and seed them, because peels and seeds add bitterness to most cooked sauces. And peeling and seeding is a lot more work.

Canned tomatoes? Go 6-in-1. Web site is www.escalon.net -- you can order online. Buy 6 and you'll pay just 2.50 for a 28 oz. can.

Enjoy! Pizza making thread below which speaks to the quality of 6-in-1.

I love them, hard to find though I think!
