Baked lemon pepper chicken?????

ok 2nite i just seasoned and put all the good stuff on my chicken for dinner 2marrow and i was wondering should i put it in the oven wrapped with foil on top or should i leave it top less and for how long??????


Answers:
My guess would be to cover with foil in the oven and remove that for the last 20 minutes or so for the skin to firm up. Hope you have made some for me too!!

LEMON BAKED CHICKEN FOR A CROWD

1 1/2 c. lemon juice (about 7 lg. lemons)
1/2 c. salad oil
2 tbsp. salt
1 tbsp. pepper
1 tbsp. thyme leaves
1 lg. onion, minced
1 lg. garlic clove, crushed
6 (3 lb.) broiler-fryers, cut into quarters

In medium sized bowl mix first 7 ingredients. In two 17 1/4 x 11 1/2 inch roasting pans, arrange chicken quarters, skin side up. Pour lemon mixture over chickens. Bake in 375 degree F. oven 1 1/2 hours or until chicken is fork tender, basting with pan juices occasionally during baking.
To serve, arrange on platters, spoon some pan juices over chicken.

Makes about 2 dozen servings

I wouldn't bother covering it, just put it in and cook as per normal. ;)

INGREDIENTS

* 6 skinless, boneless chicken breast halves
* 1 teaspoon lemon pepper
* 1 pinch garlic powder
* 1 teaspoon onion powder

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. Place chicken in a lightly greased 9x13 inch baking dish. Season with lemon pepper, garlic powder and onion powder to taste. Bake in preheated oven for 15 minutes.
3. Turn over chicken pieces and add more seasoning to taste. Bake for an additional 15 minutes, or until chicken is cooked through and juices run clear

cover it with foil only to prevent it from getting too brown /burnt. Or once you have taken it out of the oven, to keep it warm. The cooking time depends on the weight of the chicken: you need to calculate 30 minutes for each 450 gr (1 pound). The oven should not be too hot : 180-200F.

One hour, 350 degrees. For that "crispy golden brown look" the last five minutes, put the oven on Broil and let it crisp and brown. MMMMMMMmmmmmmmmmmmmmm

Baked Lemon Pepper Chicken:

6 boneless skinless chicken breasts
1 quart buttermilk or milk
1 (15 ounce) container plain breadcrumbs
1 medium lemon, juice and rind of, freshly grated and squeezed
lemon pepper seasoning
1 cup unsalted butter

1. pound each chicken breast flat (I found it easier to do this task between pieces of wax paper on my breadboard).
2. place each piece of chicken in a bowl filled with the buttermilk and/or whole milk. let the chicken marinate in the milk for several hours (3-4). note: if you don't have the time to marinate, just dip in the milk and move on to the next step. marinating makes the chicken more moist.
3. prepare the breadcrumb mixture as follows: place one (1) 15 oz. container of plain breadcrumbs in a large bowl. add several teaspoons (more or less depending on your taste buds) of lemon pepper seasoning to the crumbs (available at any store-very inexpensive). grate the rind of the entire fresh lemon and add to the crumbs. mix well.
4. pre-heat oven to 350 degrees. use 1/2 stick (4 tbsp.) of the unsalted butter to grease (2) two 9x13 jelly roll pans.
5. dip each piece of chicken into the breadcrumb mix making sure to completely press-coat on both sides.
6. place the coated chicken into the pans trying not to let the pieces touch one another. generally, only three pieces will fit in one pan.
7. melt together: the remaining butter (1 and 1/2 sticks)and the freshly squeezed lemon juice. drizzle mixture over each piece of chicken.
8. bake uncovered for 1 (one) hour. the edges of the chicken will become crispy from the drizzled butter/lemon mixture.
