VINAIGRETTE

1/2 tsp salt
1/4 teaspoon paprika
1/8 teaspoon pepper
1 1/2 teaspoons tarragon vinegar
3 tbsp. cider vinegar
1/2 cup olive oil
1 tbsp. gherkins, finely chopped
1 tbsp. green pepper, finely chopped
1 tbsp. parsley, finely chopped
1 tbsp scallions, finely chopped
1 tbsp onion, finely chopped
1 tbsp. garlic, finely chopped

Combine salt, paprika, vinegar, oil, and beat well. Add remaining ingredients. Serve with cold asparagus, tomatoes, fish, vegetables, or as a salad topping.

For a simple vinaigrette use 2/3 cup Olive Oil with 1/3 cup vinegar. I normally add a little brown sugar and some chopped garlic too. If you dont want it too sour, just use less vinegar. Good luck!

3 parts extra virgin olive oil and 1 part red wine vinegar plus a packet or two of splenda, whisk them all together, add a dash of salt and pepper and you're done!

there are lots of types of vinaigrette one of the simplest one is a white wine vinaigrette.

For the white wine vinaigrette:
2 tablespoons white wine
2 tablespoons lemon juice
1/2 teaspoon honey
1/2 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil

For the vinaigrette:
Mix the wine, lemon juice, honey, mustard, salt, and pepper in a blender. With the machine running gradually blend in the oil. Season the vinaigrette to taste with more salt and pepper, if desired. ( if you don't have a blender just use a bowl and a whisk or fork)
