Meat and potatos?

my husband is super picky and will pretty much only eat beef or pork. anyone know any tried-and-true recipes or good websites with easy recipes? i'm so tired of pot roast and spaghetti!

Wow I feel your pain, this has to be tough. how about the recipes below, I really hope they help!

OVEN BEEF STEW

2 pounds beef stew cubes
1 (32 ounce) can tomato juice or V-8 cocktail
3 cloves garlic, crushed
1 onion, sliced
1 stalk celery, sliced
1/4 teaspoon oregano
1 beef bouillon cube (optional)
3 or 4 carrots, sliced
4 or 5 potatoes, cubed
1 tablespoon flour
1 tablespoon sugar (optional)
1 1/2 tsp. salt
1/2 teaspoon black pepper

Preheat oven to 250° F.
In a casserole dish, blend salt and pepper, sugar (optional), oregano, flour and one crushed beef bouillon cube (optional).

Stir in tomato juice, mixing well to combine. Add remaining ingredients.

Cover and bake about four hours.

If using a slow cooker, which also works well for this dish, set your timer for six to eight hours on the medium setting.

HOT ROAST BEEF SANDWICHES

1 lb. thinly sliced roast beef
1 can beef broth
1 whole onion, thinly sliced
3 cloves garlic, minced
1 small can sliced mushrooms
3 tablespoons Wondra flour
2 tablespoons ketchup
1/2 tsp. onion powder
1/4 tsp. garlic powder
1/4 tsp. each salt and pepper

In a medium saucepan, bring beef broth to a boil. Add onion and garlic powder, ketchup, minced garlic and sliced onion.
When broth comes to a rolling boil, drop in the separated sliced roast beef and remove immediately from heat. Using a slotted spoon, remove roast beef from broth after 2-3 minutes. Return broth to stove on high setting and sprinkle Wondra flour over surface, stirring briskly to avoid lumps.

Simmer over medium heat 5 minutes. At the last minute, drain the sliced mushrooms and add. Pour over roast beef on white bread. Season to taste with salt and pepper. Serve.


SWEET AND SOUR PORK

2 lbs. pork, cubed
1 large can pineapple chunks, reserve liquid
1 large green pepper, cut into squares
1 large red pepper, cut into squares
3 tbsp. soy sauce
1 tbsp. freshly grated ginger
3/4 cup pineapple juice
1 tbsp. rice vinegar
1/2 cup cashews, broken
1 tbsp. sugar
1 tbsp. cornstarch
1 tbsp. olive oil
1 large onion, chopped
2 cloves garlic, minced

Chop the onion, cube the pork, and saute in the olive oil.
When the pork begins to brown add the peppers, garlic, ginger and cashews. Stir in the pineapple juice, rice vinegar, sugar, soy sauce, and cornstarch.

Simmer 10 more minutes.

Remove from heat and serve over cooked rice.

Butterfly Honey Pork Fillets

INGREDIENTS:
4 pork chops (Butterfly cut)
4 teaspoons honey
1/2 cup Worcestershire Sauce (or 1/4 cup Soy Sauce and 1/4 cup Worcestershire Sauce)
ground black pepper to taste
DIRECTIONS:
In a shallow glass dish or bowl, mix together honey and Worcestershire sauce. Add pork chops and toss to coat. Cover and refrigerate for no more than 4 hours to marinate.
Lightly oil grill and preheat to medium low.
Remove pork chops from marinade. Season with pepper to taste and grill for 35 to 40 minutes, turning often.
Great served with cooked apples.

Hamburger Pie

1# ground beef
1/2 c. chopped onion
2- 16oz cut green beans, drained
1- 10 3/4 oz condensed tomato soup
1/4c. of water
salt and pepper to taste
3 med potatoes, peeled and quatered
1 beaten egg
milk
1/2 c. shredded chedder cheese
Cook hamburger and onion till meat is browned and onion is tender; drain off grease.
Stir in beans, soup, water and season with salt and pepper.
Place mixture in a pan.
Cook potatoes in salted boiling water about 20 min or until tender; drain. mash while hot; stir in egg. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape. Season with salt and pepper.
spread potatoes on top of meat mixture. Sprinkle with cheese.
Bake, uncovered, in a 350 degree oven for 25-30 minutes.
makes 4-6 servings

Here are a few off the top of my head...I know how hard it is to add variety with a picky eater!!!

Easy Beef Stroganoff

1 lb ground beef
1 package wide egg noodles
1 can beef broth
1/2 tsp dried mustard
2 Tbsp corn starch
splash cold water
1/2 cup sour cream

Brown ground beef in a skillet, while boiling noodles (very slightly undercook noodles). Drain both well, and combine in the larger pan. Stir in beef broth and dried mustard and bring to a simmer. In a small bowl or cup dissolve corn starch in a little water and add to pan. (Do this because dry corn starch will clump in hot liquid) Stir and simmer until sauce becomes thicker. Remove from heat and stir in sour cream.

Serve

Easy Beef and gravy

Any thin cut beef, cube steak, breakfast steaks, chopped steaks etc (basically your budget cuts)
beef broth
worchestershire sauce
1 onion sliced
mushrooms, sliced or whole
3 Tbsp corn starch
splash cold water

Place meat in a baking dish, single layer. sprinkle with pepper (the broth has plenty of salt) spread mushrooms and onions over meat. Pour broth to cover meat. add 3-4 shakes of worchestershire sauce (more if you like) Cover dish tightly with foil and bake 325F for 1hr.

Remove meat and veggies to serving platter. Pour liquid in a small sauce pan. Mix 3 Tbsp corn starch with a splash of cold water and add to liquid. Bring to a boil to thicken.

Serve with rice or potatoes.

Option: peel and quarter potatoes and cook with meat, omit onions and mushrooms if you don't like them.

Pork chops and rice

Pork chops
1 cup rice
1 jar brown gravy
beef or vegetable broth

Spray baking dish with non-stick spray. Spread rice evenly over bottom. Place pork chops over rice. In a bowl mix brown gravy with enough broth to make 2 1/4 cups total liquid.
Pour over pork chops and rice. Cover tightly with foil and bake 45 minutes to 1 hour at 325F.
Serve

Works best with bone-in chops, not the thick butterfly kind. You can also substitute 1 can of mushroom soup for brown gravy.

Beef Stew

Cube your beef and put in a plastic bag with about a cup of flour. Coat beef well. Put in a pot (not pan you will cook the stew in this pot) with 2 tbl of olive oil or butter (a tasty fat), minced onion and garlic (I use a lot of garlic about 3-4 cloves) sear the beef well, (don't cook it). Turn heat down add sliced carrots, potatoes, celery, onions, a bay leaf and steak seasoning. Cover with water or beef broth (the broth adds alot of flavor that you just can't get otherwise). Bring to a boil, drop heat and simmer for 2-4 hours. The longer you simmer the stew, the thicker the liquid and the more tender the beef. I made this recipie over years of making it. The more you make it the better it will get because you will find what you want the most of...
