Simple Tomato Sauce Recipe?

Im looking for a very basic recipe for tomato sauce just a good base low in acidity not too sweet not to salty that I can work my own ingredients into?

BASIC ITALIAN TOMATO SAUCE

1 lg. onion, diced
2 cloves garlic, minced
1 can tomato paste
2 lg. cans tomato sauce
1 c. water
1/3 c. sugar
Salt and pepper to taste

Cook onion in a small amount of olive oil until onion is golden but not brown. Add garlic and saute 3 minutes longer. Add the tomato paste, tomato sauce, water, sugar, and spices; bring to a simmer very slow until the sauce is thick and a deep red. Serve with meatballs.
Makes about 2 quarts.

Tomato Sauce
20 Roma tomatoes, halved and seeded
1/4 cup olive oil
1/2 teaspoon kosher salt
1 teaspoon pepper
1 cup finely diced onion
2 teaspoons minced garlic
1 tablespoon finely chopped oregano leaves
1 tablespoon finely chopped thyme leaves
1 cup white wine

Preheat oven to 325 degrees F.
In 2 (13 by 9-inch) pans place tomato halves cut side up. Sprinkle with oil, salt and pepper, onion, garlic, and herbs. Bake tomatoes for 2 hours. Check the tomatoes after 1 hour and turn down the heat if they seem to be cooking too quickly. Then turn the oven to 400 degrees and bake another 30 minutes. Remove from the oven and process tomatoes through a food mill on medium dye setting over a small saucepan. Discard skins. Add white wine, bring to a boil, reduce heat to low and cook for 5 minutes.

Peel a bunch of tomatoes.

Puree them in a blender.

Cook down until thickened with onion, garlic, oregano to taste.


Can in mason jars.

If you add meat, pressure cooker process when you can.

Tomato sauce is really simple. It will cost you just as much to make your own as to buy off the shelf, BUT, the quality is much better, and you know what's in it. No worries about federal permissible quantities of insect parts etc.

Best ever is when you grow your own tomatoes, onions, garlic and herbs.

brown onion and garlic in oil on low heat, do not burn, cover for about 10 min. Unitl onion is tender. add sauce salt and pepper. cook uncovered until boils, taste with a piece of italian ciabatta bread.
