Chicken and dumpling help, please!?

I'm making chicken and dumplings. Do I leave the lid on while the dumplings are cooking, partway, or off?
Also, the basic chicken&dumpling recipe I am using (that has a make-your-own dumpling recipe) says "Serve immediately". However I am going to make bisquick dumplings. Do I need to serve the chicken&dumplings immediately... or can it be refrigerated for next night's dinner and the dumplings be all right? Thanks!! :)

Dumplings are usually cooked for ten minutes covered, then ten minutes uncovered.

I'm not really clear on your second question. Make the Bisquick dumpling dough while the chicken is cooking. 20 minutes before serving time, add the dumplings as above. After cooking they can be stored overnight with the chicken and gravy.

You can't store uncooked dumpling dough.

When I make C & D, I use bisquits too. I don't cover them and they are fine to serve then or even later. I also use some chicken stock (bought) to help flavor it more. I also add carrots for color. My son and neighbors kid, who normally do not like carrots, love them in the C & D. Just get the little ones and add them in when beofre you do the dumplings.
Don't worry about the lid, don't worry about serving immediately. Just let it cool before you put it in the refridgerator.

Do not worry about the lid being on cooking it with it off is probably best.
As far as serving.. the more the dumpling sits in the broth the heavier they become. If you like them really fluffy and light then serve them immediately. They make great leftovers as the left over portion will probably be more like a homemade noodle texture.
I make them often but never use Bisquick. They are simple to make, flour, egg, baking powder, and salt.

Cook on simmer 10 minutes with the lid off and 10 more with the lid on on low temp.

By leaving them sit for more than 10 minutes before serving, they will begin to take on liquid from the stew. If you want to try to "hold" them, pull them out of the liquid onto a plate, cover loosely, and put back into the steamy liquid 10 minutes before you want to serve them. It might work, depending upon how fluffy or firm they are.

Refrigerating the leftovers can some times end up as chicken and gravy because the dumplings can dissolve. If you use canned biscuits instead of home made the dumplings will stay together atfer refrigerating. Plus canned biscuits are MUCH easier!!!

I had always used cut up canned biscuits for my dumplings when a co-worker suggested using strips of flour tortillas instead. We tried and loved it. They will be ok for the next nights dinner.
