Good dinner recipies for family?!

Good dinner recipies for family?

Just about everynight I cook dinner for my family(my hubby, 3 young sons and myself) and after having to cook for so many years, I'm running out of ideas on what to cook, am feeling uninspired right now.
My sons won't eat salad of any sort, but we do eat alot of roasts, casseroles, chicken and rice and all of that sort of thing.
usually I add vegetables with whatever I cook to balance everything out.
Does anyone have any good dinner recipies suitable for feeding a family that is cost effective and doesn't have too many ingredients? Or can someone point me to a good website with dinner recipies please?

CORN-BREAD TOPPED PORK CASSEROLE

olive oil
1 medium onion, diced
2 garlic cloves, minced
2 pounds pork pieces, cut into 1-inch chunks
1 28-ounce can whole tomatoes
1 4-ounce can chopped green chilies, drained
1/2 cup water
2 teaspoons brown sugar
salt
1/2 cup all-purpose flour
1/2 cup cornmeal
2 tablespoons sugar
1 1/2 teaspoons double-acting baking powder
1/3 cup milk
1 egg

2 HOURS BEFORE SERVING:

In a large skillet over medium heat, sauté onion and garlic until tender in 2 tablespoons olive oil. Using a slotted spoon, remove onion mixture and set aside.
In the drippings remaining in pan, sauté pork chunks over medium to high heat until well browned.

Return onion mixture to pan. Stir in tomatoes (with juice from can), brown sugar, green chilies, water and 3/4 teaspoon salt.

Bring to a boil, stirring to loosen brown bits from bottom of skillet.

Spoon pork mixture into a deep 2 1/2-quart casserole dish. Cover casserole and bake at 350°F for 1 hour.


Corn-bread topping:

5 minutes before pork is done, prepare topping.
Combine flour, cornmeal, sugar, baking powder, and 1/4 teaspoon salt in a medium bowl. Whisk in milk, egg, and 2 tablespoons olive oil just until blended.

Remove casserole from oven. Pour off or skim excess fat from liquid in casserole. Spread corn-bread batter evenly over top of pork mixture in casserole.

Bake for 20 minutes or until golden and toothpick inserted into corn bread comes out clean.

Serve immediately.


CROCKPOT CHICKEN AND RICE CASSEROLE

4 chicken breasts
1 can cream of celery soup
1 can cream of chicken soup
1 can cream of mushroom soup
2 stalks celery, diced
1 bay leaf
1 large onion, chopped
1/2 teaspoon Bell's Poultry seasoning
3 cloves garlic, minced
1 cup Minute Rice

Mix the cans of soup with the rice at the bottom of the Crockpot. You may substitute the type of soup you use in any combination (for example: 2 cans cream of chicken soup and one can celery soup).
Add the diced celery, onion, and garlic and stir. Submerge the chicken in the soup.

Turn heat to high for 10 minutes, then reduce to medium and cook for 4-5 hours. Or cook on high for 3-4 hours.

Variation: leave out the rice and serve over cooked Pennsylvania style wide noodles.

Note: Use temperature setting recommended by your owner's manual for cooking. Some crockery cookers have 3 settings - high, medium, and keep warm.

Don't use the "keep warm" setting instead of the "cooking" settings for extended periods. Sometimes the high setting will cause overcooking and you will lose the benefits of using a slow cooker. The high setting is best used to bring food up to a safe temperature quickly before beginning slow cooking at the "medium" or "normal" setting.

Try Pita Pizza, very simple and the kids will love it.
Just go out and buy some Whole wheat Pita bread, Canned pizza sauce, and your favorite pizza toppings and cheese

place in oven on 400 for 3 min and enjoy.

The good thing about this dinner is that the kids can make their own and they love it...enjoy

You can go to www.bettycrocker.com and get some recipes. I have a killer recipe for meatloaf though. You can use ground beef and ground sausage, with onions, 1 egg, breadcrumbs and Ketchup (optional). it is a very big hit with my family!

A good recipe website is www.foodinaminute.co.nz has lots of easy and quick meals and recipes, its a NZ website but you can always use different ingredients (cos they advertise a certain NZ brand a lot) but lots of great meals and a lot of variety :)

pasta with broccolli or cauliflower, its simple cook pasta and sautè the veg in oil and garlic, then drain pasta and put in the pan with the veg. and mix together, and more olive oil if nec. and grated parm. cheese. then you can roast potatoes and zukinis, cut into bite size pieces or bigger, plan in roasing pan, drizzle with olive oil, salt and pepper, and maybe a little cheese too.
you may want to boil the zuccini and potatoes prior to baking, for faster baking.

I use this recipe quite often it fits my family's budget and is so delicious:
Frito Chili Pie Casserole
Place two cups of Frito brand corn chips in a baking dish(glass) arrange large chopped onion and a half cup of shredded(american)cheese over corn chips.Pour a (19oz) can of chili over onion and cheese.Top with one cup corn chips then top with a half cup of shredded cheese.Bake at 350 for 15 to 20 minutes makes 4 to 6 servings

I just tried this recipe a few nights ago. My 3 kids and my husband and I really liked it:


CUBAN GOULASH


1 lb. diced pork roast (I used pork chops)
1 big yellow onion, diced
1 15 oz. can diced tomatoes(don't drain)
4 bananas, diced
Cayenne pepper


Brown the pork pieces on all sides in a little bit of cooking oil. Add the onions and cook slowly covered until onions are soft. add the tomatoes AND the juice. Add bananas and simmer covered for about 30 min. or so.

I know it looks and sounds weird, but it really tastes good. After I fixed the kids' plates, I added some red chili powder instead of cayenne pepper and it was really good. It's so easy to make too!!
