CROCK POT BRISKET

1 (3-5 lb.) brisket, trimmed (one that will fit in pot)
1 can cream of mushroom soup
1 pkg. onion soup mix
Water to cover

Trim fat off brisket. Place in crock pot, cover with soups and enough water that meat is just covered. Cook on high until starts to bubble (30 minutes to 1 hour). Turn to low and cook 6 to 8 hours or until meat sticks tender with fork.

Slow Cooker Brisket Dinner

5 pounds brisket -- trimmed
1 large onion -- chopped
1 large carrot -- chopped
2 teaspoons salt
1 bay leaf
1 1/2 teaspoon thyme
1 cup water
1 pound small boiling onions -- peeled
6 medium carrots -- 1/4 " pcs

Cut brisket in half or roll to fit into Crock-Pot. Add chopped onion, chopped carrot, bay leaf, thyme, salt and water. Cover and cook on low 8 to 10 hours. When meat is done, lift gently from stock.

Support underneath with a spatula and keep warm. Add small onions and carrots to stock in Crock-Pot. Cover and cook on high 1 to 2 hours. Remove vegetables from broth with a slotted spoon and arrange around the meat.

Roughly chop onions, garlic, celery, leek and mushrooms.

Put them in the slo-cooker - which will have been pre-heated.

Fry your brisket without seasoning - salt pulls out too much moisture from the meat. Do this as hot as possible, you only want to seal the outside. I have tried doing meat without first frying and find it far less palatable.

Put on top of vegetables and add stock or a flavoured soup such as mushroom, oxtail, mushroom or whatever you prefer. Adjust seasoning now or at the end.

Put lid on the slo-cooker and let it cook.

Crock Pot Brisket
1 (3 pound) flat beef brisket
2 (12 ounces) bottles chili sauce
1 (1 ounce) envelope dry onion soup mix
2 teaspoons garlic powder

Place the beef brisket into a crock pot.

In a medium bowl, mix together the chili sauce, onion soup mix and garlic powder. Pour over the brisket. Cover, and cook on LOW for 8 to 10 hours. Slice the brisket and pour some of the gravy over it. Cut against the grain and pour the gravy over the slices.

Crockpot Brisket recipe
1 (5 to 7 pound) beef brisket
1 head garlic, divided into cloves
6 tablespoons Tony Chachere's seasoning
2 teaspoons red pepper
1 onion, chopped
2 (10 1/2 ounce) cans cream of mushroom soup
1/2 cup water
Cornstarch, for thickening
2 tablespoons Kitchen Bouquet (more if needed)

Trim brisket of fat and cut each garlic clove in half. Stud meat with garlic pieces. Generously sprinkle Tony Chachere's and red pepper over meat. Add onion, soups and water. (You can use the reduced-fat mushroom soups if desired). Cook on LOW for 8 to 10 hours.

Remove brisket and allow liquid in crock pot to cool. As fat rises to the top, skim and add cornstarch for thickening and Kitchen Bouquet for color to make gravy. Slice brisket and serve.
