I like to make pancakes for my kids i have the edmonds cookbook which has a very simple recipe Im not that keen on it I like the macdondalds ones how do they get them so soft an tastie

Apple Pancake Tier [6 serv; ready in 30min]

6 eggs
1 cup milk
1 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
5 tablespoons butter or margarine, melted
6 cups sliced peeled baking apples
1/4 cup sugar
1 teaspoon grated lemon peel
confectioners' sugar

In a mixing bowl, beat eggs until fluffy. Add milk. Combine flour, salt and cinnamon; add to egg mixture and mix well. Brush 3 tablespoons butter on sides and bottom of three 9-in. pie pans (using 1 tablespoon in each pan). Divide batter evenly between the pans. Bake at 400 degrees F for 20-25 minutes or until golden and puffy. Heat remaining butter in a skillet. Saute apples for 10 minutes or until crisp-tender. Stir in sugar and continue cooking for 5 minutes or until apples are tender. drain, reserving juice. When pancakes are done, stack on a serving plate in this order: one pancake, a third of the apples and a third of the lemon peel. Repeat layers. Dust with confectioners' sugar. Pass reserved apple juice if desired.

Easy Pancake Recipe
Ingredients


1/2 cup milk (or buttermilk)
2 tablespoons butter or margarine (melted)
1 egg
1 cup flour
1/2 teaspoon baking soda
2 tablespoons sugar
1/2 teaspoon salt
Mix the milk, butter and egg in a bowl. Combine the flour, baking soda, sugar and salt and add them all at once to the first mixture. Stir until just moistened. Lightly butter or grease a griddle or frying pan and set over moderate heat until a few drops of cold water sprinkled on the pan form skittering globules. Pour about 1/4 cup of the batter (per pancake) onto the griddle. Cook until bubbles form on top and the undersides are lightly browned. Turn with a spatula and brown the other side. Place finished cakes on a heated plate in a very slow (200°) oven until ready to serve. Top with strawberry jam, fresh strawberries, or strawberry syrup.

2 c self-rising flour
2 tbl. sugar
1-1 1/2 c. milk (depending on thickness)
1 egg
1 tbl. oil
1 ts. vanilla extract

Mix all ingredients well.
Dip by spoonfuls into hot lightly-greased skillet. When bubbles appear around edges, flip pancake and brown.
I like to smear butter and grape jelly on mine before eating. Enjoy!

one cup of skim milk, one cup of white flour, one teaspoon of baking powder, one teaspoon of sugar and one egg. you can double it if you want to. you may have to add some more milk to thin it out.

2. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides, turning once.
