Ingredients
50g (1 3/4oz) Cocoa powder
50ml (5 fl oz) Boiling water
6 Large eggs
350g (12 oz) Caster Sugar
300g (10 1/2oz) Self raising flour
800g (1 lb 12 oz) Canned mangoes
1 tsp Cornflour
425ml (15fl oz) Double cream
75g (2 3/4oz) Plain chocolate, grated

Method
Preheat the oven to 160C, 325F, gas mark 3. Grease and line a deep 9 inch round cake tin. Place the cocoa powder in a small heatproof bowl, slowly add boiling water, stiring until smooth. Whisk the eggs and caster sugar together until light and fluffy. Fold in cocoa mixture. Sift the flour and fold into the mixture. Pour into cake tin and bake in oven for 1 hour. Cool in tin for 5 minutes, then turn out onto a wire rack. When completely cool, peel off the paper and cut into 3 layers. Drain the mangoes, reserving the juice. Put one quarter of them in a blender and purée until smooth. Mix the cornflour with 3 tablespoons of the juice to form a paste. Add to mango purée. Transfer to a saucepan and heat, stirring until thick. Leave to cool. Chop the remaining mango. Whip the cream and reserve one quarter. Fold the chopped mango into the remaining cream and use to sandwich the layers of cake together. Place on a serving plate. Spread some of the reserved cream around the side of the cake and press the grated chocolate onto cream. Spread the mango purée over the top and decorate the chocolate and mango gateau with piped cream.

100 g butter
1 tablespoon golden syrup
3/4 cup water
3/4 cup sugar
1 tablespoon cocoa
1/2 teaspoon baking soda
1 cup flour
1 teaspoon baking powder
1 egg
1 (14 ounce) can sweetened condensed milk
250 g dark chocolate
1/3 cup cream
powdered sugar




1. Place the butter, golden syrup, water, sugar, cocoa and baking soda in a bowl and microwave on HIGH for 3 minutes.
2. Stir and leave to stand for 6 minutes.
3. Add the flour, baking powder and egg.
4. Blend for about 30 seconds or until mixture is smooth.
5. The consistency should be like that of batter.
6. Pour mixture into a ring mould lined with plastic wrap.
7. 'Tap'on the bench to expel any air.
8. Microwave on HIGH for 5 minutes.
9. Leave to stand for 10 minutes before tipping out.
10. CARAMEL FILLING: Empty 1 tin of sweetened condensed milk into bowl and microwave for 6 minutes- stirring well every minute until the mixture forms a golden caramel.
11. When the cake is cool, slice in half (an electric knife comes in very handy here!), and spread liberally with the caramel.
12. Sift icing sugar (confectioners' sugar) over the top.
13. If preferred ice with'CHOCOLATE GANACHE'!
14. Break 250g of dark chocolate into small pieces and place in a bowl with 1/3 cup cream.
15. Cook on MED for 1 minute only.
16. Stir until smooth.
17. DO NOT OVERHEAT.

Chocolate Cake
Pronounced: gah toe / oh / shoh koh lah
INGREDIENTS:
3/4 cup cake flour
a pinch sea salt
7 oz. bittersweet chocolate
8 TBS unsalted butter
1 c. sugar
4 large eggs, separated
confectioners sugar for dusting
PREPARATION:
Preheat oven to 375. Butter and flour a 9" round cake pan.
1. Sift the flour and a pinch of salt onto a paper plate.

2. Melt the chocolate in a double boiler. Transfer to a mixing bowl and whisk in the butter until the mixture is smooth.

3. Whisk in all but 1 TBS of sugar. Add the egg yolks and whisk until the mixture is smooth.


4. Using a wooden spoon, mix in the flour one tablespoon at a time until all is combined.

5. In a large bowl whisk the egg whites with salt until foamy and beginning to thicken.

6. Add the 1 TBS sugar and whisk until they form soft peaks. Fold the whites into the chocolate mixture.

7. Pour butter into prepared baking pan. Bake for 20-25 minutes.

8. Remove from oven and let it cool to luke warm in the pan, then turn out onto a rack and cool thoroughly.
To Serve:
Sprinkle with confectioners sugar and slice into wedges
