Roasted mushrooms?!

Roasted mushrooms?

how do you make perfect roasted mushrooms? i tried once by slicing them, mixing with oil, salt and herbs and roasting in the oven. however they turned out slightly cooked soggy mushrooms, not like the roasted ones you buy in shops or find in sandwiches. what do you do make them taste like real roasted mushrooms?


Answers:
You have to do them at high heat and in a metal pan.

I prefer to do mine on the top of the stove in a cast iron frying pan.

well I made the mistake by washing them (i mean litter ally soaking them) just wipe them off with a damp towel and season them with garlic salt,peeper,slightly pan fry them and place them in the oven for ten min

You want "roasted" or sauteed....Sauteed is done on the stove top...I use a pat of butter whole mushrooms and on a medium to low heat cook my mushrooms with salt/pepper

Roasted Mushroom Salad:

Original recipe yield:
4 servings

INGREDIENTS

* 1 pound white button mushrooms, halved or quartered
* 1 tablespoon olive oil
* 1 teaspoon lemon juice
* 3/4 cup finely chopped red bell pepper
* 1/2 cup fresh basil or mint leaves, torn
* 1/4 cup pine nuts, toasted
* 4 leaves Boston lettuce
*
* Dressing
* 2 tablespoons extra-virgin olive oil
* 1 tablespoon balsamic vinegar or lemon juice
* 1 large garlic clove, crushed
* Salt, to taste

DIRECTIONS

1. Preheat oven to 400 degrees F. Toss mushrooms in 1 Tb. olive oil and 1 tsp. lemon juice. Spread on large baking sheet and bake 15 minutes. Drain off liquid. Cool slightly. In a bowl, combine mushrooms, red pepper, basil or mint, and pine nuts.
2. Whisk together dressing ingredients; toss into mushroom mixture.
3. Place lettuce on 4 salad plates and spoon mushroom mixture on top.
