I don't really care much for fish, and when I do eat it, it's usually covered in tarter sauce. I tried this because my husband does like fish, and Halibut is one of the fishes I will eat... It was WONDERFUL! I didn't even have to use tarter sauce, and that's saying a lot! I hope you try. I served it with an Almond Rice Pilaf. If you're interested in that recipe, email me!

GRILLED FISH STEAKS

1 clove garlic, minced
6 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
2 (6 ounce) fillets halibut

In a stainless steel or glass bowl, combine garlic, olive oil, basil, salt, pepper, lemon juice, and parsley.

Place the halibut fillets in a shallow glass dish or a resealable plastic bag, and pour the marinade over the fish. Cover or seal and place in the refrigerator for 1 hour, turning occasionally.

Preheat an outdoor grill for high heat and lightly oil grate. Set grate 4 inches from the heat.

Remove halibut fillets from marinade and drain off the excess. Grill fillets 5 minutes per side or until fish is done when easily flaked with a fork.

what kind of fish?

Don't have one, but I'll pass some advice. Check out www.foodnetwork.com, they got tons of recipes from easy to gourmet; I go there all the time and I have never been disappointed.

I find an easy way to grill fish is to wrap it in aluminum. That way, you don't have it falling through the grates and making a big mess. Unless you have one of those fish grilling pans, which I don't. Anyway....most fish taste great with a squirt of lemon juice, little bit of chopped onion and a dab of minced garlic. Yum! You can wrap all of that in the foil..be sure you don't wrap the foil too tight, leave a little pocket on the top. You could also toss some veggies in the packet. Zucchini or asparagus would be great tossed in with some of the toppings I mentioned above. Enjoy!

Salmon is easiest.

1. Take salmon fillet
2. Marinade for 30 mints with salt, lemon juice, a little garlic paste
3. Bake in 350 F for 5 minutes each side (dont forget to brush it with oil)
4. Serve with cilantro and lemon slice and ginger slices on top.

depending on the fish... try some granulated garlic,olive oil,pepper, and lime juice first putting the limes cut in half on the grill first then squeeze the juice on to the raw fish

Salmon steaks are terribly easy to grill. You need no marinate just salt and pepper - the fish is oily and so tasty enough. Cook on a hot and not flaming grill - 5 mins on both sides.

If it's a white fish I like to wrap them in foil with peppers, onions, lemon, butter, garlic, salt, pepper and paprika.... Grill until flaky, very easy, super tasty.

Swordfish - this is one I make that is soooo fast and sooo simple - everyone always loves it.
Swordfish needs to be cut no more than 1/4 " thick. You can do this partially frozen or have the Fish People do it for you. Make a sauce: 1/4 cup good olive oil. salt and pepper, juice of one lemon, Tbl chopped fresh oregano,Tbl chopped capers - whisk this all together just before using like a salad dressing. On a very hot (CLEAN and oiled grill) cook the fish about 1 minute per side. Place fish in one layer on a platter, use a fork to quickly poke some holes in the fish, Pour the sauce over and serve. I usually do this with fresh bread ( to soak up sauce) a simple vegetable salad, a good vino and a kick *** banana cream pie for dessert! I've been doing this recipe for decades and would love to credit the original chef - but I can't remember her name - some Italian lady.

Use grill as steamer- wrap your fish, veggies maybe some cooking wine or lemon & butter, seasonings of choice in heavy duty alum foil and place on grill area. when done fish will be in one piece and you have your veggie side done too

If you go to www.tonysmarket.com they have tons of recipes and i am pretty sure they change the recipes every week or every couple weeks. I am sure they will have an easy great recipe for you!

This is our favorite. Take a large sheet of aluminum foil.
Place a 1 lb. salmon fillet on it skin down, centered.
Add spices that you like on top
Spread to with regular mayonaise
Add mushrooms or onions, olives, whatever you like on top
Close and seal the foil to keep steam in
Put on Grill
Cooks fairly fast but you will have to check to see when it flakes it is done. Depends on how hot your grill or fire is

Grilled Walleye
* 12 oz walleye fillets
* 1/4 cup pecans, chopped and toasted
* 2 tablespoons butter
* 1 teaspoon fresh chives, chopped
* 1 teaspoon orange juice
* salt and pepper to taste

PREPARATION:
Combine butter, chives, juice and half the pecans in a small bowl and mix well. Preheat grill. Take a 12 inch square piece of aluminum foil and cut 2 inch slits into it every two inches. Spray with a nonstick spray and place on grill.Put the Walleye Fillets on the foil, sprinkle with salt and pepper, and grill for 8-12 minutes. The fillets are done when the fish flakes easily with a fork. One minute before the fish is done top with the pecan butter. Remove from heat and sprinkle the remaining pecan pieces over top before serving.
