Turkey Cutlets With Lemon and Parsley

Cooking Time: 4 minutes
Number of Servings: 2
Preparation Time: 5 minutes

You Will Need
1 tablespoon flour
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper
2 turkey breast cutlets (about 1/2 pound total), 1/4 inch thick
1 1/2 teaspoons olive oil
1 1/2 teaspoons unsalted margarine
1 tablespoon fresh lemon juice
1 tablespoon minced fresh flat-leaf parsley

What to Do
1. Combine flour, salt, and pepper together on a plate. Press turkey cutlets in flour mixture, coating evenly and shaking off excess; set aside.

2. Heat oil and margarine in a heavy 10-inch nonstick skillet 1 minute over medium-high heat. Add cutlets and cook 1 to 2 minutes per side, until browned. Transfer to a plate lined with paper towels to drain.

3. Reduce heat to medium. Add lemon juice and parsley to skillet, stirring with a wooden spoon to loosen the browned bits in pan. Return cutlets to skillet and cook 1 to 2 minutes, until heated through, basting often with the lemon-parsley sauce.

Tips:
Be sure to use the heaviest skillet you have when cooking poultry cutlets. Because the meat cooks very quickly, it is important that the heat in the pan is evenly distributed --and the thicker the skillet, the more even the heat.

grilled cheese tomato soup
pb and jelly sandwich and prezels
hot dogs baked beans and fries
tacos using old el paso
sloppy joes from the can and using ground beef or turkey
waffles and sausage

I get these chinease noodles in the veggie section at the store. First I saute onions, fresh mushrooms, hot pepper (like the orange or red ones), a little garlic and broccoli. When its kinda soft I add the shrimp, saute a little more, then add the noodles and usually szechuan sauce.
Dosent take long at all. Defiently the quickest meal I cook.

My favorite thing to make is beef and noodles. I brown some ground sirloin with onions and mushrooms . Then I drain the sirloin and add cream of mushroom soup and some onion soup. I put that on top of egg noodles. I also like to add some pea's too for a little something extra. It is very good and quick. Or just some awesome nacho's if I don't really feel like cooking. I can just pop them into the microwave :-)

A BLT and cup of soup

Open a can of beans. Eat cold, saves cookin' time.

Know what? I discovered the other day that the world's biggest baked bean eaters are the Irish. They also drink the most tea.

Just some junk info to throw into the conversation down the pub.

all you need is chicken breast, can asparagus, and cheese.
cook the chichen, cover with cheese and asparagus and more cheese. cook. thats it. you can even serve over rice.... if you dont like asparagus add broccoli or colliflower. its really quick and easy...

char grilled tuna steak with tomato salsa and green salad.

finely chop some tomatoes and add some crushed garlic, chili, olive oil and red wine / balsamic vinegar.

Put a sprinkle of salt and pepper on to a decent quality tuna steak and slap it onto a very hot griddle pan for 1 minute each side.

Squeeze a lime onto the tuna and drizzle some olive oil, lay on top of some green leaves and spoon the salsa over.

Beans on toast with tabasco - FFFWah! what a hit it provides too.

Frozen Pizza.

Take a cob of sweet corn and pull the husk's down but not off. Take bacon and wrap it around the corn and when it is completely wrapped, pull the husk back over it all and cook on grill for about 7 mintues or until done. It is very delcious and you dont need to put and butter on the cob of corn becusae all the juices from the bacon. It is delcious.

Scrambled egg on toast. Made in a pan, NOT microwaved, please. My son dropped by last night and I made this for him as I often do when he wants his mother's incomparable cooking, but can't stay long.

3 eggs
dribble of milk in bottom of small non stick pan
salt
black pepper
bagel or bread

put bread in toaster, milk in pan over low heat. Break eggs in and stir gently. At this stage there is time to put the kettle on if you want tea to go with it.

As the egg sets around sides of pan, keep stirring. If toast pops up, leave it in toaster till last moment to keep warm. I never butter the toast to cut down calories, but no reason why you shouldn't. Keep stirring eggs, takes about 4 minutes. When eggs are consistency of porridge (they carry on cooking in residual heat & you don't want 'em too hard), remove from heat, put toast on plate and butter if required, pour eggs over toast, grind black pepper over and place before your beloved family member and ask if they want tea.

Simple, cheap, filling, healthy and delicious

I make fish tacos.

Frozen Tilapia filets
Blackened/Cajun seasoning
Packaged pre-shredded cabbage
Limes
Sugar
1 Jalapeno
Corn Taco Tortillas
Avocado

Put some olive oil in a pan to pre-heat. Sprinkle both sides of the tilapia with the Seasoning (amount depends on how spicy you want them) These only need to cook for a few minutes on each side. While the fish is cooking, mix together the cabbage, some lime juice, a dash of sugar, more of the seasoning, and chop the jalapeno and put that in. Mix it all together like a salad. Then slice the avocado. Take the fish off the stove and cut into chunks. Place some of the fish, the cabbage salad and a slice or two of avocado on the taco and Viola! Dinner in about 10 minutes.

Melt 1/2 stick butter
2 -4 tbsp garlic (or more 2 your tastes)
1/2 tsp salt
1/2 can of beer or 1 cup of white wine
2 tbsp parsley fresh or dried
heat til boiling
Thicken with cornstarch (predisolved)
Add to sauce
Add 1-2 bags of thawed fully cooked and deveined shrimp
(running under cold water for 10 mins will work or leave in fridge overnight)
Add shrimp, toss, sprinkle fresh parmesean/romano

In the meantime, boil pasta of your choice in water and chicken broth (1 can). Drain. Mix in with shrimp mixture and serve.
