Can anyone give me a recipe for this?

I need a recipe for just plain Muffins (the british term) or Cupcakes (as I believe they are often called in America). I want to add things to it (like chocolate, fruit etc) so it needs to be pretty basic. Thanks!

I lived in England for a bit but am from the U.S.
I thought cupcakes (in the UK) were called fairy cakes, here's a recipe for fairy cakes:

HERE is a basic "muffin" recipe from the UK:

Muffin recipe ingredients: Serves 4-8
380g self-raising flour
100g butter (cut into small cubes)
200g caster sugar
300ml milk
1 beaten egg
100g raisins
large pinch of cinnamon

Muffin recipe cooking Instructions:

1. Blend the sifted flour and butter in a large bowl.
2. Fold in the sugar, milk, raisins, cinnamon and egg, don't worry if the mix isn't smooth.
3. Spoon the mixture into the well greased muffin tray (or paper cases).
4. Bake on the middle shelf at about 180 degrees C for 20 minutes.

HERE is a basic cupcake recipe from the U.S.:

Ingredients for Basic Cupcakes Recipe
1 cup milk
4 cups flour
5 teaspoons baking powder
2/3 cup butter
2 cups sugar
4 eggs

Instructions
Cream the butter and sugar.
Add the eggs well beaten, then the milk.
Add flour sifted with baking powder and stir thoroughly.
Bake in buttered and floured cup tins in a hot oven for about 25 minutes.
Once the cupcakes are completely cool, they can be covered with any kind of frosting or topping.

Here is a plain yellow cake recipe, thats great for cupcakes.


Yellow Cake

Ingredients
2 sticks unsalted butter
6 egg yokes, well beaten
1 1/2 cups milk
(Milk, butter, and eggs should be at room temperature)
4 cups cake flour, sifted
4 teaspoons baking powder
1/4 teaspoon salt
1 3/4 cups sugar
2 teaspoons vanilla

Directions
Preheat oven to 350 degrees.

In a large bowl sift together flour, salt, and baking powder; set aside. Butter and flour 2- 8-inch cake pans and set aside.

Cream butter until fluffy; add sugar gradually and beat until fluffy. Add egg yolks and vanilla, beat until well combined. Add flour mixture to the butter mixture, alternating with the milk and stir until smooth.

Pour the batter into cake pans two thirds full and bake for 45 minutes or until toothpick comes out clean. Cool in pan for 10 minutes and remove to wire racks.

And here is one for plain muffins--

INGREDIENTS:
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon + 1 teaspoon baking powder
1 tablespoon sugar
3/4 cup milk
2 eggs, beaten
1/4 cup melted shortening
PREPARATION:
Sift together the flour, salt, baking powder, and sugar. Combine remaining ingredients; add to dry ingredients all at once. Blend just until dry ingredients are moistened (batter will be lumpy). Fill greased muffin cups 2/3 full.


Bake at 425° for 25 minutes.
Makes 12 plain muffins.

Here is a recipe for cupcakes and below a recipe for muffins:

2 cups white sugar
2 cups sifted all-purpose flour
3 egg yolks
1 egg
1/2 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup shortening
1 cup boiling water
DIRECTIONS
Mix together the buttermilk with the baking soda. Set aside. Cream shortening, sugar, eggs and vanilla. Beat well.
Add buttermilk and baking soda mixture.
Sift dry ingredients, and add to creamed mixture.
Add boiling water, and mix well.
Pour into a greased and floured 9 x 13 inch pan. Bake at 350 degrees F (175 degrees C) for approximately 35 minutes, or until toothpick comes out clean.
Let cool. You can add anything to it. I use different types of frosting.

This is a whole-wheat muffin, you can add fruit too!
1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup white sugar
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/3 cup vegetable oil
1 egg
DIRECTIONS
Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
In a medium bowl, combine flours, sugar, baking powder and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

If I were you I would go to the store and buy a cake mix. Follow the directions on the back of the box and then once you get it into the pan, Pour some hot fudge or put some slices of fruit on top. I would NOT suggest mixing it in with the batter because then you can not try different things, and if you dont like it will be hard to pick apart. I am a baker and I take a brownie mix (out of a box) and mix it up and put it into a pan. Then I go and cut up some Hershey Bars or Hershey Kisses and then spread those on top of the batter that is in the pan. And after I add that on top of the batter I add some hot fudge. (sometimes they add it into the box) and then bake it for about 20 minutes or however long the box says to bake it.

~~~ Fast Cherry Chocolate Ice Cream-Filled Cupcakes ~~~

This recipe should be called Instant Party. I made these cupcakes for my niece's eighth birthday bash and won the "best aunt" award!

12 cupcakes

? 12 chocolate cupcakes
? 2 pints cherry chocolate ice cream (or your favorite flavor)
? 1 pint chocolate frosting

Using a tablespoon or large melon baller, scoop out about a golf-ball-size portion of cake from the top of each cupcake. Soften the ice cream slightly and spoon a scoop into each cupcake cavity.

Place the frosting in a piping bag with a star tip and pipe the frosting over the tops of the cupcakes. Freeze for 1 hour. Can be made up to 4 hours in advance.

~~~~~~~~~~ Vanilla Cupcakes ~~~~~~~~~~

Makes about 10 pieces

125g butter, softened
1 cup sugar
3 eggs
Seeds from 1 vanilla pod, or 1 tsp vanilla extract
1 1/2 cup plain flour
1 tsp baking powder
1/2 cup milk

Lemon icing:
1 cup icing sugar
2 tbsp lemon juice
A splash of milk, to adjust consistency

1. Preheat oven to 170 deg C (non-fat assisted). Line cupcake tray with cupcake peper cups.
2. Place butter and sugar in a mixing bowl. Cream both together using an electric mixer.
3. Add eggs and vanilla seeds (or extract) and beat until well-mixed.
4. Sift plain flour and baking powder into another bowl.
5. Add a third of the flour into the creamed mixture and mix well using the electric mixer. Add a splash of milk while mixing.
6. When the ingredients are well incorporated (but do not over-beat), add another third of the flour and again, mix well while adding another splash of milk.
7. Repeat process one more time, using up the remaining flour and milk.
8. Spoon cake mixture into cupcake paper cups to half full.
9. Bake for 25-30 minutes. Allow cupcakes cool completely before icing.
10. To make the icing. Mix icing sugar and lemon juice until smooth correct consistency by adding more icing sugar (for firmer icing) or a splash of milk (for more liquid icing)
11. To ice cupcakes, drizzle 1 to 2 tsp of icing on each cupcake. Carefully spread icing over the top of the cupcake.
Finish with decorative candy hearts.
