Quick meals for picky eaters?
I want to impress my live-in boyfriend and cook him something good. (the last time I tried to cook for him was a disaster and he hasn't let me cook since) I don't really know any recipes or good meals though because I grew up in a single parent home and my mom worked all the time so we never really had family dinners because she never had time to cook. I pretty much had macaroni, chicken on the george foreman grill, grilled cheese, cereal, ramen soup, pb&j, or some variation of the previously mentioned foods every day of my life growing up.
Another problem with cooking is that we are both pretty picky.
Recipes can't have any of these in it:
eggs
any beans but kidney beans
spicy things
spaghetti
alfredo
ham
pork chops
vegetables other than corn on the cob, mashed potatoes, and sundried tomatoes
steak
and I'm so sick of chinese, pizza, and BBQ because that's all we've been having lately.
PLEASE give me some good recipes. =D

just cut the chicken breast into small pieces, flour and deep fry, then pour sweet and sour sauce over it. thats yummy
try cutting up chicken breast, sauteeing it, & add diced tomatoes & serve over pasta..it's not spicy & tastes real good & the best part is it's EASY....good luck
Shrimp curry
1. 1 onion, stir fry till brown
2. Add shrimps
3. Cook for 5 minutes
4. Add abut half a cup of coconut milk
5. Add sliced potatoes
6. Add tomatoes, ginger, garlic
7. Cook till the potatoes are done
8. Add cilantro and basil

Spiced Potato (I am assuming that you are using about 8 potatoes)
1. Take 1 large onion and chop it up (about 2 cm per piece)
2. Heat up a skillet/any type of pot you like and add the onions in some cooking oil
3. Cook for about 5 mints
4. Add pepper, and a can of salsa
5. Add about a cup of yogurt and a cup of boiling water
6. Cook for about 15 mints
7. Check if the potatoes are done
8. As soon as the potatoes are done add some chopped ginger, 1 chopped bell pepper, 2 large tomatoes and fresh cilantro. Cover the pot for about 10 mints to steam the pepper and tomatoes

Stuffed pepper (for 8-13 peppers)
1. Take 1 onion, chop and heat in cooking oil on a skillet
2. Take about half a pound minced meat and add to the onion
3. Add 1 teaspoon cinnamon powder, I tea sp. Garlic paste and same amount of ginger
4. add salt and vinegar
5. Add a cup of water, cook for about 30 minutes
6. Boil 1 and a half cup of rice for 10 minutes and drain
7. mix the rice with the minced meat and cook in low-medium heat for 10 more minutes
8. Add 2 tomatoes/ketchup/puree
9. Add cilantro, and about 2 teaspoon of mayo in the entire thing (do not overdo the mayo)
10. Take the top of the pepper and take out the seeds. Heat up the grill or the oven to 350 F.
11. Stuff the pepper with the rice and meat mix
12. Put the top back on and grill for 3-5 minutes (be careful, it burns easy)

Salmon is easiest.
1. Take salmon fillet
2. Marinade for 30 mints with salt, lemon juice, a little garlic paste
3. Bake in 350 F for 5 minutes each side (dont forget to brush it with oil)
4. Serve with cilantro and lemon slice and ginger slices on top.

Chicken with rice
1. Marinade chicken in garlic, ginger, yogurt and salt for about an hour
2. On a skillet/crock pot add cooking oil and add 1 or 2 chopped onions
3. Add the chicken
4. Add a little vinegar
5. Cook for about 20-25 minutes, if it gets too dry add a cup of boiling hot water
6. Cook the rice separately
7. Mix with the chicken
8. Put on the stove in low heat, add 2/3 sliced tomatoes, cilantro, 1 small shopped ginger and ground black pepper. Cover for 5 minutes.

use macaroni and add cheese to make mac and cheese using velveeta cheesy ness up to u
to give it a spin add salsa and cooked browned and drained of fat ground beef or turkey and mix together for a mexican mac and cheese
make mashed potatoes adding cheddar and a sour cream with garlic flavor to make them creamy and tasty
serve with chicken breast that you dip in a egg and milk mixture and bread into bread crumbs italian or reg and then pan fry on a hot pan of vegetable or canola or olive oil just a light layer on the pan all over and fry the chicken till brown on both sides then put on a papper plate with paper towel to soak up oil then put next to potatoes and serve with cream corn in a can or reg corn in a can
Easy Salisbury Steak
1 pound ground beef
1/3 cup herb seasoned stuffing, crushed
2 tablespoons finely chopped onion
1 egg, beaten
1 tablespoon vegetable oil
1 can (10 1/4 oz. size) beef gravy
1 jar (about 4 1/2 oz. size) sliced mushrooms, drained (optional)
4 cups hot mashed potatoes
Directions:
Mix thoroughly beef, stuffing, onion and egg. Shape firmly into patties, 1/2" thick.
Heat oil in skillet. Add patties and cook until browned. Pour off fat. Add gravy and mushrooms. Heat to a boil. Cover and cook over low heat 5 minutes or until done. Serve with hot mashed potatoes.
Oven-Baked Chicken Parmesan Recipe
6 boneless skinless chicken breast halves (about 2 lbs.)
1 packet seasoned coating mix for baked chicken
2 C. spaghetti sauce
1 t. dried oregano
1/2 t. dried basil
1/4 C. grated Parmesan cheese
1 1/2 C. shredded mozzarella cheese
Preheat oven to 400°F. Coat the chicken with the baking mix as described on the package directions. Place chicken in a 9 x 13 inch baking pan. Bake for 20 minutes until the chicken is cooked through.
In the meantime, warm the spaghetti sauce on the stove in a saucepan.
Take chicken from oven after cooking, spoon sauce over each piece. Sprinkle with oregano and basil and top with cheeses. Return to the oven for an additional 5 minutes or until the cheese is nicely melted.
Serving suggestion: Serve with cooked pasta, such as spaghetti, fettuccine or rigatoni.

Okay you could make chicken breast with italian dressing, Mashed garlic potatoes (boil garlic cloves with the potatoes),
French bread with garlic butter & melted jack cheese (Yummy)
I guess corn since yu wont have any other veggie. So salad is out!
How about Chicken Picatta? It's a chicken dish with lemon, wine, and capers (optional). It fits your requirements and I think it's really, really good. Here's a recipe:
4 (6-ounce) chicken breasts
2 cups all-purpose flour, seasoned with salt and pepper
1/4 cup olive oil
1/4 cup lemon juice
2 cups chicken stock
Splash of white wine
1 tablespoon capers
1/3 cup unsalted sweet cream butter
Dust the chicken breasts with the seasoned flour; shake of any excess. Heat the olive oil in a heavy sided medium saute pan over medium heat and then add the chicken breasts. Saute until golden brown on both sides. Once the chicken breasts are browned, drain the oil and add the lemon juice, chicken stock, wine, and capers to the pan with the chicken. Reduce for about 5 minutes, turning the chicken breasts halfway through. The chicken is done when it is firm to the touch. Turn off the heat and add the butter, stirring until melted. Put 1 chicken breast on each of 4 plates and drizzle with remainder of the sauce.
Pick the ingredients that you do like, and go to http://www.allrecipes.com and search by ingredients. A couple other options: artichoke dip, gyro (mediterrenean), etc. Also watch the Food Network--Giada has some great italian recipies that aren't all Spaghetti, Paula Dean has great southern dishes (love her idea of potpurri in a crock pot), Sandra Lee's Semi-Homemade is also great.
