Chicken paprikash..?
I had a neighbor who taught me how to make chicken paprikash.. When I would make it, I would call her for help.. She has moved away, and I can't get in contact with her, so can you please tell me how it's done.. I wrote it down several times, and can't find it.. I'm making it for a family get together this weekend.. Thanks

Chicken Paprikash
Yields: 6 servings
1 (2 to 3 pound) whole chicken, cut into pieces (or 4 chicken breasts cut into thirds)
2 tablespoons olive oil
salt and pepper to taste
1 cup chopped onion
2 tablespoons Hungarian paprika (hot)
1/2 cup white wine
1/2 cup chicken broth
1 cup sour cream
1.In a 12 inch skillet, heat olive oil and brown chicken on all sides. Season chicken with salt and pepper. Remove chicken and set aside.
2.Add onion to skillet. Cook just until tender, but not brown. Stir in paprika. Return chicken to skillet, turning to coat with paprika/onion mixture. Add wine and broth. Bring to a boil; reduce heat, cover and simmer for 40 minutes or until chicken is fully cooked and tender. Remove chicken and keep warm.
3.Boil skillet drippings until reduced to 1/2 cup liquid, about 3 minutes. Stir in 1 cup sour cream. Heat through. Serve chicken atop pasta if desired, and pour sauce over all.
2 c. chicken broth
3 lb. boned, cooked, cubed chicken
1/4 c. butter
med. chopped onion
2 heaping tsp. paprika
1 c. sour cream
2 tbsp. flour

DUMPLINGS:
3 beaten eggs
1/2 tsp. salt
1/2 c. evaporated milk
1 1/2 c. flour
Brown chicken in butter; remove and set aside. Add onion to butter and cook until tender. Add paprika and salt and pepper to taste. Return chicken to skillet and add broth. Cover and simmer 20-30 minutes.
Blend flour with a little water then blend into chicken. Add sour cream to paprikash and heat slightly. Serve over noodles or dumplings.
To prepare dumplings: Combine eggs, milk and salt. Stir into flour. Drop by teaspoons into boiling salted water. Cook 5 minutes after they float.
Serves 4-6.
