This is a chocolate trifle that is sooo yummy and reallllyy easy to throw together!

1 (17 5/8 ounce) package brownie mix (whichever brand or type you prefer)
1 (12 ounce) bag miniature chocolate chips (you will not need entire bag)
1 (11 3/4 ounce) jar hot fudge (optional)
1 (16 ounce) container whipped topping
1 (6 ounce) box instant chocolate pudding mix
3 cups milk (for pudding)

First Layer.
Prepare brownie as directed on box and add about a half cup of choc chips. Once brownies are cooked cut them up or spoon about half of them out of pan and into bottom of trifle dish. Then heat up fudge and randomnly spoon fudge over brownies. Use half of jar.
2nd Layer.
Prepare pudding as normal with a cup of mini choc chips. Then pour half of pudding on top of the brownies.
3rd Layer.
Then spoon 8oz (half of tub) of whipped topping onto the pudding. Try to spread evenly so the layers are clean looking.
Then REPEAT all three layers and garnish with mini chocolate chips.
Then cover & chill in fridge until time to serve

Maui Madness

1/3 cup macadamia nuts -- coarsely chopped
2 tablespoons unsalted butter
4 slices fresh pineapple
1/4 cup molasses
2 tablespoons dark rum
1 tablespoon lemon juice
1 pint coffee ice cream

Lightly toast the nuts in a small dry skillet over medium heat, stirring, until they are golden and fragrant, about 2 minutes. Immediately remove from skillet to prevent burning.

Melt the butter in a medium skillet and cook the pineapple over medium heat, turning once, until tinged with gold, about 2 minutes per side. Stir in the molasses and simmer, spooning the sauce over the fruit, for 3 minutes. Transfer the pineapple to 4 shallow dessert bowls.

Add the rum and lemon juice to the skillet and simmer, stirring, until slightly thickened, about 2 minutes.

Place a scoop of the ice cream on each pineapple slice. Spoon the sauce over the ice cream. Sprinkle with the nuts and serve immediately.

For fast and easy I always make strawberry shortcake. You can buy the cups in the bakery section of your grocery store, or sometimes in the fruit section by the strawberries. Put whipped cream on them, then top with strawberries and/or blueberries. Strawberries are in season right now too and are delicious!

Easy German Sweet Chocolate Pie

1/3 cup milk
1 tablespoon sugar
1 small package (3 ounces) cream cheese, softened
8 ounces Cool Whip whipped topping, thawed
1 prepared 8- or 9-inch chocolate cookie crumb or graham cracker crust

In a saucepan, combine chocolate with 2 tablespoons of the milk; heat over low heat, stirring, until chocolate is melted. Beat sugar into the cream cheese; add remaining milk and the chocolate mixture. Beat until smooth. Fold whipped topping into the chocolate mixture until blended.
Spoon filling into crust then freeze until firm. If desired, garnish with additional whipped topping and cookie crumbs or chocolate curls. Take out of freezer and let stand at room temperature for about an hour before serving. Store in freezer.

**Add a few sliced strawberries for decoration if you want. They go well with this pie.

Really fast easy and great:

2- 8 oz blocks of cream cheese
3 tubs cool whip (or one big, one small)
2 cans of favorite pie filling (I use one strawb. and one blueberry) or fresh fruit
Graham cracker crust mix

In a large casserole dish press graham cracker crust on the bottom --made by box directions (melted butter + sugar + crumbs) Whip cream cheese and cool whip and spread over crust. Pour on pie filling, and chill. You can adjust quantities of cool whip and cream cheese to your preference on richness and amount...and it's always a hit. (this would also be good spread in those mini graham pie crusts)

fudge:Easiest Fudge in the World
This recipe probably came from Eagle Brand or Nestle, I can't remember which one. So I'll give credit to both. It is probably the easiest recipe in the world, thus the name! For an even more indulgent version, use chocolate flavored sweetened condensed milk.
ingredients
12 oz. pkg. semisweet chocolate chips
14 oz. can sweetened condensed milk
prep:
Place chips and milk in microwave safe bowl. Microwave on medium power for 2-3 minutes, stirring after 2 minutes. Microwave, stirring at 1 minutes intervals, until chips are melted and mixture is smooth and thick.

Hope I helped!
