Question:

When I overcook roast beef, it's really tender?

I left my roast beef in the oven at 375 degrees for like 5 and a half hours by accident, and when I cut it, the outside is really hard and crusty, but the inside is soft, almost like smoked meat? What's up with that?


Answers:
Roasts are tough cuts of meat and as they cook the connective tissue (collagen) throughout the meat dissolves into gelatin which coats all the muscle fibers making it seem tender and juicy.

It's not ruined. You can still eat it!

you burned it on the outside..use a crockpot

Sounds like it contained lots of fat which helps juice up meat. Plus the crust on the inside kept in the juicies of the meat.
That is what we as artists call "a happy accident"
