Whats a good dinner for 2 that will go with asparagus?

Kids are gone for 2 weeks, only have to cook for boyfriend and I. We want asparagus for dinner, but dont know what else. Am up for grilling or just an overall dinner.

Lasagna with Pesto sauce (not tomatoes), mozzarella and asparagus!
Find the pesto recipe on google: it is very easy to cook and it is a cold sauce.
Then you have only to change:
Tomato sauce=> pesto
add mozzarella and asparagus cut

grill some steaks seasoned with sun dried tomatoes and your favorite seasoned potatoes... mmmmmmmmm

grill them up with some olive oil and some grilled chicken roasted peppers, sun dried tomatoes, basil, oregano, Parmesan cheese add balsamic vinegar.

Try this:
Ingredients:

* 500 g fresh Asparagus
* 2 tsp Lemon juice
* 3 Egg yolks
* 175 g Butter, melted
* 2 lemons, cut into wedges

Method:

* To make Hollandaise, whiz egg yolks and lemon juice in a blender for 1 minute, then pour in the melted butter and whiz for another 1 minute until sauce has thickened.
* Bring some water to boil in a sauce pan and cook asparagus for 3 minutes and drain.
* Serve asparagus with Hollandaise on top and lemon wedges.

grilled salmon or steak

Mmm, serve your asparagas with this awesome chicken dish
Sautéed Chicken with Lemon Garlic Sauce

1 T. olive oil
1 garlic clove, minced
2 chicken breast halves
salt, pepper
1/2 C. chicken broth
1/2 C. pitted kalamata or other intensely flavored olives
1 T. lemon juice
1 C. cooked rice, optional

Heat oil in medium skillet. Add garlic and saute over medium heat 1 minute. Add chicken, seasoned with salt and pepper to taste, and brown 5 minutes per side.

Remove chicken. Pour in broth and scrape up any browned bits. Return chicken to skillet along with olives. Cover and simmer 30 minutes. Remove chicken and keep warm. Add lemon juice and cook down liquids by a third. Return chicken to pan to heat through.

To serve, spoon chicken and skillet sauce onto each of 2 plates. Serve rice on the side.

Makes 2 servings.

Oven-Roasted Salmon, Asparagus and New Potatoes
Serving Size : 4

1 pound small new potatoes, halved
2 Tbsp olive oil
1/2 pound asparagus, trimmed and sliced on the diagonal, 1-inch long pieces
1 Tbsp chopped fresh dill
1 strip of lemon zest
2 garlic cloves, chopped
salt & freshly ground pepper, to taste
2 salmon steaks (10 oz each), cut about 1-inch thick
1 lemon cut into wedges

Preheat oven to 400F. In a large, shallow baking dish coat potatoes with olive oil. Arrange potatoes, cut side down, in the baking dish and roast for 10-12 minutes, until the potatoes begin to brown on the bottom. Turn the potatoes over and roast another 10 minutes until browned on top. Remove dish from the oven.

Toss asparagus with chopped dill, lemon zest, garlic, salt and season with pepper. Add asparagus mixture to the potatoes and stir to combine.

Push vegetables to the side of the dish to make room for the salmon steaks. Return the baking dish to oven and roast the salmon and asparagus 10-12 minutes, or until fish is just cooked through.

Remove the skin and center bones, and arrange on individual plates before serving. Garnish with fresh dill and lemon wedges.

Sautee garlic and red pepper flakes in olive oil. Then add asparagus, and sautee til slightly soft. Add one large can of good quality crushed tomatoes. Heat through. Serve over hot oiled noodles and garnish with freshly grated parmesan cheese.

Grilled chicken breast and oven roasted potatoes. Grilled fish. Steak on the grill. Pork chops. Anything goes with it.

Mmm, grill the asparagus and serve with chicken or fish. You can cook that on the grill too - wrap it in foil with herbs & seasonings, maybe a little wine to keep things moist. Rub the asparagus with olive oil and a grind of pepper before grilling.
