Answers:
Mustard Sauce
* 1 cup yellow mustard
* 1/2 cup balsamic vinegar
* 1/3 cup brown sugar
* 2 tablespoons butter
* 1 tablespoon Worcestershire sauce
* 1 tablespoon lemon juice
* 1 teaspoon cayenne

PREPARATION:
Mix all ingredients together and simmer over a low heat for 30 minutes. If your making this sauce for a whole hog multiple the ingredients by about 8.

Yeah mustard and water

Seriously though - I make Mustard sauce sometimes with water instead of milk - it just wont be creamy.

INGREDIENTS
1 tablespoon butter or margarine
1 tablespoon all-purpose flour
1 tablespoon ground mustard
1/3 cup water
1/3 cup vinegar
1/4 cup sugar
1/3 cup mayonnaise
DIRECTIONS
In a saucepan, melt butter. Stir in flour and mustard until smooth. Add water, vinegar and sugar; mix well. Bring to a boil; cook and stir for 2 minutes or until slightly thickened. Remove from the heat; add mayonnaise and mix well.

why not use just throw in a load of mustard like they do in honey and mustard dressing....
olive oil, mustard, (would abit of soya milk work?), herbs,
soya butter or ordinary butter?
does it have to have the same consistency as sauce made with milk?
and is it possible without using milk?

Like you said, it's made with mustard powder but you really need milk- you can make it with water but that won't be as nice, and I think teaspoonful of vinegar and one of sugar. If you buy some dry mustard powder there will probably be a recipe on the back of the tin. Don't know how you'll get round the milk issue though.
